Curry is a great low carb dish!! It's loaded wtih fibers from different spices. If you are going to cook curries and would like to stretch it ..here are the tips..
1- put hard boiled eggs in your left over curries - then you have egg curry. or u can simply put some meat!
2- use as meat marinade .. u can fry/ bbq or slow cook the meat afterward
