Veggies are plentiful at the road side stands. My mom was staying with me and I had her help me fry up some eggplant. I used soy flour , instead of regular. It was delicious. My dh will be going back and getting the rest of the eggplant. I will be frying up more and making eggplant parmasean to freeze.
