Okay.....so I've bought an eggplant, spaghetti squash and cauliflower. I also have a filet mignon that I got for $5.99 at whole foods!

So what can I make with all of this? I have never ever ever in my life eaten eggplant, spaghetti squash and cauliflower.....so please make it taste bud friendly for the beginner lol.

Hi Neecie

Welcome to StellaStyle. There are many great recipes onsite for cauliflower, eggplant and spaghetti squash. Mock Garlic Mashed Potatoes is everyones favorite 'go to' recipe. It's very easy to make. Eggplant needs some help with flavor and will take on the flavor you season it with. You can marinate it with Italian herbs and olive oil, or a LC dressing, and grill it with some mozzarella melted on top. A family favorite for many years here. You can also coat it with soy flour and fry it. You'll find a recipe for that here also. I'd never had spaghetti squash until recently. I love it with just salt and pepper. Another favorite recipe is Mark and Stacy's Hash Brown Casserole. It is awesome.
There was a recent post about cutting the squash around instead of lengthwise. It gives you longer strands that way. If you do a search, you will find many, many helpful hints about cooking spaghetti squash. It helps to get some how to's before attempting to cook it. Others have already gone through the trial and error stage for you.

Denise, I wouldn't do all three of the veggies for the same meal. (Not sure you meant too, just sayin.)
I haven't done much with egg plant myself, and don't really have any suggestions for it.
You can serve spg squash like you would just about any spaghetti. Just make sure your sauce is low carb. Georges Anaheim shrimp scampi is good. The recipe is in the recipe section. And you can use other meats besides shrimp. His Alfredo sauce is good served over spg squash. (I sub out the Parm cheese for other cheeses cause I don't like Parm cheese,,, Just letting you know you can use other cheeses in it. I use shredded.)
Do a search there are a lot of good reciepes for cauli & spg squash on here.
I like "twice baked" cauliflower. You can grate the cauli & use it as a rice sub in dishes.

Welcome... well I am just delighted with all the neat things you can do with those 3 veggies.
Cauliflower- mashed as Beth said as a replacement for mashed potatoes
moc Mac and Cheese .. Georges recipes.. Wonderful
moc potato Salad - using the cauliflower as the potato and the usual other stuff you put int potato salad

Eggplant- love this as well. My italian aunt started deign this and the family loved it.

Eggplant Boats
2 Eggplants
1 lb of ground beef
1 sm onion chopped
Garlic to your own taste
1- 1/2 c of Spaghetti sauce - no sugar
Parm cheese
Mozzarella cheese
Salt and pepper to your taste
cut each EGGPLANT in down the long ways.. and scoop out most of the insides leaving a even Shell around the outside of the eggplant SAVE the scooped out squash.
then saute the garlic and onions and saute the inside of the eggplant w the are soft take out of pan and set aside
add ground beef cook drain and add back the sauted onion etc mix together
Add some parm cheese and a sm amount of sugar free spaghetti sauce. to the meat mix..... just to moisten..
place eggplant shells in a oiled baking pan.. stuff the meat into the shells add sm amount of sauce over the top and sprinkle w mozzarella and parm cheese and bake in 350 for 35-40 min. until the shell is soft. .
I ususally do 2 eggplants at a time getting 4 Boats..This has all the flavors of a veggie lasagna but better..
**** before cooking you can FREEZE the several of the boats for a later meal.. Defrost and cook as above.

spagehitti Squash..
Think of it as angel hair pasta.. and use it the same way... I made some the other night to go along with Chicken Parm I made.. just put sm amt of sauce on it and sprinkled w parm.

check out the recipes on this board and here is another one .She uses lots of Stella recipes and tweaks them for her own family. Kind of what George says he did with some of the Atkins recipes.

I did the garlic parmesan bites with my steak along with mock mac and cheese

Tonight I did eggplant lasagne

ALL SO VERY YUMMY!!! Never in my life would I have dreamed I would be eating this stuff! AND MY 6 YEAR OLD EATS IT TOO!!

i just remembered the first time i did eggplant lasagna, my oldest was heading for his second helping when I asked him if he knew what the noodles were. when i told him eggplant, he clutched his throat and said I'm allergic to eggplant!!! he was kidding of course... I'm his mother, I'd know if he was allergic. Didn't stop him from grabbing another slice!
