Hi everyone,
I just wanted to share a recipe that I made up today as a modification of other recipes I had on hand. These are not only low carb but also gluten free. Very easy for any beginner.

Lauralee’s Peanut Butter Cookies

Ingredients
• 1 cup peanut butter, creamy or crunchy
• 1 1/3 cups Splenda
• 2/3 cups almond flour
• 2 eggs
• 1 tsp vanilla extract
• 1 tsp imitation butter flavoring
• 1 dropper full LorAnn Peanut Butter flavored oil (optional)
• 1 Tbs Molasses
• 1 Tbs Imitation Sugar Free Honey
Directions
Preheat the oven to 350 degrees F. Spray PAM on a large baking sheet.
In a mixing bowl, combine all ingredients, and stir well. Roll the dough into balls. Place the balls on the prepared baking sheet. With a fork, dipped in sugar replacement to prevent sticking, press a crisscross design on each cookie. Bake for 12 minutes, remove from the oven, and sprinkle the cookies with some of the remaining sugar replacement. Cool slightly before removing from pan. Very Happy

Sounds good Laura.

Just a note about the molasses,,,, I NEEDS to be black strap molasses! Black strap is not only much lower carb than regular molasses, but it has more nutrients. Either way molasses is pretty carby, but divided out in the recipe to make quite a few cookies, it should be OK. ? Tho you don't say home many cookies you get. (That will vary by the maker to a degree.) I think you can cut back on it, still get flavor, and less carbs. Just my thoughts on that.

There are 14.95 g carbs per 1 TBsp molasses, about 12 in blackstrap, and tho it doesn't seem like a lot of difference, like I said it is more nutritious.
