I will be trying many of the recipes in the new cookbook. I will post how things turned out in my kitchen, in the menu section.
Today I fixed the waffles for my DH and I. They were absolutely delicious. I can't believe how light they were. My $7, 2 slot waffle maker from Walgreens was great. We ended up with going 6 minutes. I may even try 7 next time to get them a little crisper. I drizzled mine with a little honey. I noticed some recipes in the new book allow honey.

I went right by the recipe and it made 6 nice waffles.

I will not be tucking my waffle iron away any time soon. This will be a regular in my kitchen. I may even use the waffles as a grilled sandwich of some sort too. The options are to numerous to mention.

thanks for the review Paula! I've made them a couple times and they are really good! I use a little SF Syrup, I think it's Walmart's brand made with splenda, but it doesn't take much. I do want to get a better waffle iron tho, cause I think the one I bought is a dud. brown in the middle, but still white on the edges. and mine won't crisp up.

Can't wait to attack more recipes in the book. I saw one for a Cauliflower Salad with pecans that looks really good Pg 76. Oh, and the Creamy Tomato Soup is to die for, and soooo simple to make. (made it 3 or 4 times now) The Cabbage and Kielbasa soup in the Slow Cooker section is to die for too. So soothing on a cold winters day.

Can't wait to read more reviews!

If you are really saving your carbs.....I took the remaining waffle from breakfast and sliced it horizontally and had a pork sandwich for lunch. Yummy. I may have to look for some LC toppings for the waffles. Just putting butter isn't going to do it for me. I am out of fruit and will have to get some frozen strawberries. That should do the trick.

I/we do like the waffles, but I think I'm gonna have to forgo them. I think I'm having problems with soy. Not really sure. But I had been having them quite a bit last month, and then I had blood work done. (Usually have it every 3 - 4 months.) My thyroid levels were high, and it is usually in the normal range. Doc did order the "other" thyroid tests, and they came out normal. (didn't see the numbers, doc's office just said normal) But by the time I had those tests, I hadn't had the waffles in a week or so. Question Question Question Maybe the soy wasn't the problem, but I just don't know!
I used just a little of the Walmart (or similar) SF syrup too. And sometimes I sprinkled a little Cinnamon "sugar" (not sugar but sweetener) on them.
