In an effort to stay honest with myself I'm going to give this a go!

Monday March 1st

B-Black coffee, Atkins Bar
L-Grilled Chicken Salad w/ranch
D-Italian Beef Bowl w/ mozzerella cheese
S-LC choc cheesecake thing with whipped cream

I've been using the Atkins bars for a little while and it (as of yet) doesn't seem to stall me. I'm a big granola bar lover so it is a great substitute. Hope it continues to be ok!

Been about a year, gonna do it again! Have stayed with it but have sort of fallen off of the forum.....

B-3 1/2 pieces of bacon, 2 eggs scrambled, 1 slice cheese, coffee
S-Palmful of cashews
L-Nothing, wasn't hungry
D-Lasagna and sauteed zucchini

Might have a snack of a low carb root beer float later Laughing

Ok, onward and upward!! Very Happy Here is today's tentative menu...

B-Almond/Flax pancakes and sausage with sugar free syrup
L-Leftover lasagna and salad
D-Cheeseburgers and broccoli slaw

Snacks if needed-nuts, slim jims, water and unsweetened iced tea all day!

It's just basically a ruben sandwich without the bread made into a casserole. Earlier in the week I roasted a huge corned beef brisket and let it sit in the fridge. Today I sliced it layered half of it in a casserole, rinsed a can of sauerkraut, layer that, the rest of the corned beef then top it with swiss cheese and bake it it's hot and bubbly. I make homeade thousand island dressing and serve it on the side to dip although I have also layered that under the cheese at times. It comes out really well. I make sure to add caraway seeds to the kraut so I have a small nod to the rye bread. German low carb lasagna!

MMMmmmmm ! A root beer float sounds GOOD right about now! it 'TWAS MEANT TO BE... for me to peek in here and get inspired!

You sound like you're doing well with your protein entrees... sounds DELUSH!! A heads up on buying fish/ shrimp. If we buy from farm raised places overseas, they are reportedly FILTHY DIRTY with no food standards... YouTube has videos on that situation, I hear, but wild is much healthier.

You don't like vegies much, Rae?

Lent has started so Fridays are meat free for me. I also gave up iced tea for lent which is pretty much the only thing I drink so I'll be drinking lots of water!!

B-Poached eggs w/ low carb toast, black coffee
L-Deviled eggs, cucumber, onion, tomato and cheese salad, water
D-Beer battered whiting and onion rings (Carbquick), broccoli slaw

I like certain veggies but no, I'm not usually the type to try lots of new veggies just because I am low carbing. I eat cauliflower, cucumbers, mushrooms, green beans, broccoli, romaine salads, cabbage, peppers, tomatoes and zucchini. They generally make up my side dish. Because I tend to do big batch cooking once every week or two you'll see that for those weeks I eat all the same veggies cause they are cooked and ready to go.
