Well, I have been gone for almost a week. I left last Friday morning early. I did not have internet access while I was gone. (well I did for about 15 - 20 minutes one day, but on a slow slow slow service, which was more like 5. So I've got a lot of catching up to do.
I made 3 batches of sugar free jams (2 blueberry & one muscadine) today. (Muscadines are a wild grape that grows down there, if you have never heard of them). I had some canned, and decided to use one jar to make the jam today. My MIL gave me 2 quart bags of frozen blueberries (from her small blueberry patch. I made those up first, then the Muscadine. I used a new "to me" pectin product called Pomona. It has probably been around for quite some time, but I had never heard of it till I read about it a little while back on another low carb site. (Someone may have mentioned it on here too. ???) I found it at a new health food/vitamin store here, Vitamin Cottage/Natural Grocers. (new here) I picked up a box the other day to have on had to try. Worked well with no sugar. I did use sweeteners. I used a combo of Erythritol, Xylitol, stevia, and Splenda Quick Pack. I think possibly I needed more sweetener, but I still think it will be good. I don't like mine super sweet, but hope I got it sweet enough. The sweeteners worked well, but may just not have used quite enough. It tasted sweet enough hot (I tasted as it was cooking), but it doesn't seem as sweet as it got cold. (I had tiny amounts that I didn't jar, and put in small containers, and put in the ice box (fridge to those of you who don't know).
I'll have some on low carb bread toast in the morning!

The jelly/jam is good! I do need to make a note to add a bit more sweetener. I was wingin' it on how much to put in. I don't like mine as sweet as some, but this is a little tarter than I'd have liked. But DH said "I'll eat it". He agreed that it is OK, but could stand to be a bit sweeter.
Here are pics of the Blueberry (same jar of jam, different lighting). Didn't take pics of the Muscadine.
I got 5 - 1/2 pint jars & 2 pints of Blueberry, and
1 pint & 2 - 1/2 pints of Muscadine, plus enough extra for sampling (put in baby food containers). Would liked to have put it all in 1/2 pints, but didn't have enough of that size jars. I have LOTS of pint jars. _________________ Billie

After making these jellies/jams using the Pomona's Pectin, I highly recommend it!

It is not sold everywhere. I guess mainly in Natural Food stores. You can order directly from Pomona, but of course it is more expensive that way due to shipping. S&H is included in the online price.
I made 3 batches (1 quart of fruit per batch), and had pectin left over from one box. It was $2.99 for the box at my local Natural Grocers Store (new in town). _________________ Billie
