bacon cheeseburger egg cups

since my food budget this week is rather lean, i cooked breakfast out of my pantry/freezer today

i had a pound of ground beef i browned with onion and frozen green bell peppers. seasoned with salt pepper and a bit of garlic powder

i used the large 6 serving muffin cups sprayed with pam

divided the meat out evenly

added some cheddar cheese maybe 2 tablespoons each

cracked an egg over each one, then decided it needed more, so i whipped 3 eggs and divided that over the 6 muffins

remembered i had bacon cooked in the fridge so topped it with that, and baked for about 25 minute at 350....

yummmy!!!!!!!!!

Eggs (and ground beef) are so universal! Amazing what we can do with them.

thanks billie, it was pretty good, except i think i cooked them a little too long. i don't like runny eggs, but these came out a little rubbery. need to back off on the time a bit. gonna be my to go breakfast this week.

I make a similar "quiche", but I bake it in a pie plate. Actually I usually make at least 2, sometimes 3 of them. Of course they don't have the solid egg over the beef.
I usually serve it as a dinner meal. But of course it would be a great breakfast!!!
My basic recipe came from Frank Ballatore on here years ago. (back in 2004 on the old site before this one was set up.)

As I said before, eggs are so versatile, and can be used for breakfast, lunch, dinner, and snacks!!!!

I don't know why I've never made any of the egg cups for prepare ahead breakfasts. Especially during times my DH has been off working, and it was just me here. Especially as much as I hate cooking! But I never have.

I do try to keep bacon pre baked and ready to warm up. And for my DH, I try to keep sausage pre cooked, so breakfast is quicker to prepare. (I don't care much for sausage, and rarely ever eat it. Don't fix it for myself!)

I rarely follow the recipe exactly. I don't measure things exactly. I almost always use more eggs, even if only making one "pie". When I make 3, I use usually 2#s ground beef, and a dozen eggs. I just add the other stuff as it looks like it needs it, or what I have on hand.

I've added veggies to these too. Broccoli is good. Love to add sautéed onions. (sometimes I sauté sometime just add them to the mix. I never put my cheese in the egg mixture. I put the browned beef in then cheese on top of that, then pour the egg "batter" over that. So the recipe is just a lose guide. LOL

I think that Frank even said when he posted it that is was "similar" to one he had posted about making (no recipe at the time).

I know you have seen it, just forgotten over the years! Wink

To me it is a great prepare ahead meal. Not sure how it would freeze, but keeps several days in the fridge, so makes great meals later in the week.
