I see a lot of recipes use Soy Flour in George's cookbooks. I can not eat a lot of soy. It bothers my thyroid. THere is lots of information on the two.
Is there something I could use in place of the soy that would be comparable to Soy in recipes? |

The two are not really interchangeable. Soy has much less fat than almond flour. This extra fat changes the results dramatically. Also, the two vary in the amount of liquid they can absorb.
If you want to make almond flour muffins, it's best to find a good almond flour muffin recipe rather than attempting to convert a soy one.

Soy flour has less fat than almond. This changes the outcome pretty dramatically. If you're going to sub soy for almond, I'd use a little bit less and add some fat to compensate.
