Jody's Pumpkin bake

8oz cream cheese, softened
5 eggs
1/2 c. splenda (whatever sweetener you prefer = to 1/2 c)
large can of pumpkin (15 ounceish)
1/2 Tb. pumpkin pie spice
1 t. cinnamon

Combine all ingredients. Pour batter into a glass baking dish that
has been sprayed with nonstick spray. Bake in a 350 oven until center
is done - it will look 'puffed', but will shrink down as it cools.
Makes 4 large servings w/ approx. 6 carbs per serving.

can also be put into individual muffin cups

I put this in the dessert section, as most people seem to eat it as such. I tend to like to serve it as a side dish like you (us Southerners anyway) would a sweet potato casserole. Sans the marshmallows & brown sugar. Tho they do make low carb marshmallows, and you could use Brown Sugar Twin, Brown DiabetiSweet, or Whey Low God. Only place i know of to get the marshmallows is thru Netrition.com.

Some who were using it as a dessert thought they needed more sweetener. You can certainly add more to your taste!!

Pumpkin is allowed, or should you be losing first? Also, how are sweet potatoes and winter squashes regarded on this WOE? Thanks!

Mary, This is just My personal opinion, but if you are just starting to lose (or haven't even started weight loss yet), I would stay away from Sweet Potatoes for a while, or at least go very easy on them. They are very nutritious, and tho they also have lots of fiber, they are still very carby. That being said, everyone is different, and some can eat things that others can't and still lose weight. It's a sad fact of life. Rolling Eyes I do remember that the first year I was low carbing, I weighed the pros & cons, and decided to eat a small portion of the at Thanksgiving (and maybe Christmas). Actually now I have no idea the "consequences". I'm afraid as with most things, you just have to try things that are questionable, and see the results.
Pumpkin is allowed. It is fairly low carb, are are most (not all) winter squashes. As with everything tho, moderation is the key.

Butternut squash is one of the winter squash exceptions. It is quite carby. Pumpkin would be a much better option, as would several other winter squashes.

Again, that is mostly just my opinion. Others may differ.
