I came up with this recipe by taking ideas from some other people, and blending them into a new Glcu Cake. The main part of the flourless recipe came from CarolynF from LCF.

Flourless Chocolate Gluc Cake

1 egg, beaten well
1/2 tsp. vanilla
1 Tbs. heavy cream or half/half or CC milk (Sometimes I use coconut milk or coconut cream, not concentrate - Billie)
2 Tbs. cocoa
10 tsp. of sweetener of your choice (this time I added 5 packets of Splenda) (I use a blend of sweeteners - Billie)
1TBsp oat fiber
3/4 to1 tsp Glucomannan
1/2 tsp. baking powder
1 Tbs. softened butter (I use coconut oil - Billie)

In a small bowl, beat egg with fork and add in the rest of the ingredients until a smooth batter is formed. (I usually mix it in the same "bowl" that I cook it in.)
Pour into a cup which will hold 10 ounces. You could use a large coffee mug..I Pammed it..Microwave for one minute.. (I like to use a medium size ramekin - Billie)

The carb count would depend on the sweetener. You could use Davinici syrup..I don't think it would affect the texture of the cake..But, without the sweetener, you would have .7 carb for the egg and 2 NET carbs for the cocoa powder..About 3 net carbs in all..then add the sweetener carbs.

adapted from CarolynF's Flourless 3 minute chocolate cake to use oat fiber & Gluc by Billie (Carolyn was playing around with another flourless cake which used different types of flour subs to see if she could make one without any flour subs. I've come back around with additions, but I really like these additions. Makes it very cakey, and has LOTS of fiber.)
