You don't say if they are marinated or "au natural" but check the recipes, there are some good ones for a spinach/artichoke dip ala Houston's restaurants. If they're marinated, just toss them onto your salad along with some Italian cold cuts and other fresh veggies...right now asparagus is coming in and they really go well with the chokes.
I recently ran across a recipe for fresh artichokes and couldn't find it when my market had a sale...I bought three. I normally just steam them and use mayonaise as a dip for an appetizer. BUT, I tried to adapt what I remembered of that recipe...thank goodness I have a lemon tree. I quartered the globes and scraped out the choke, rubbed with lemon, then steamed them in a skillet with the lemon juice and rinds...salt and pepper and WOW! the lemon adds so much. Still dipped them in mayo but I think I've found a new way to cook them.
I know this doesn't help with the jarred artichokes, but an ideas if you go fresh.

Hi, I hope I'm not breaking any rules posting a recipe I got from another site. I have put the persons name to give them credit.
If they are not marinated:
Artichoke Chicken
6 boneless, skinless chicken thighs (I used breasts)
1 16 oz can artichoke hearts, drained and chopped
1/2 c mayo
1/2 c sour cream
1 c parmesan cheese
black pepper to taste
Heat oven to 350.
I browned the breasts first.
Place meat in a greased casserole dish.
Mix remaining ingredients and spread over chicken.
Bake about 40 minutes (till the top is browned and the chicken is cooked through)
I found this recipe on another low carb web site and it was posted by Tennessee.
We LOVED it. Its even good the next day for lunch. _________________ Wishin |
