I wasn't sure where to post this recipe, but I guess SIDES is as good a place as any.

These will be a nice party appetizer, a nice meatball sub for Italian Sauced meals...could be used in a sandwich, as a quick grab snack or meal on the go.l
I just polished off an entire cookie sheet of these ...well 2 remain but they won't be there by the time I complete typing this recipe. LOL ( oops! There goes part of one now! They are addictive !

Shopping List:
1 1/2 to 2 cups, cold or hot spaghetti squash
1 to 2 links Mild Italian sausage, casings removed ( I use ONLY Johnsonville brand)
1/3 cup red sweet bell pepper, finely diced
2-3 shakes garlic powder
2-3 shakes onion powder
1/2 cup grated parmesan

Optional: 2 Tbs of a tangy cheese such as bleu cheese crumbles or feta

To Make:
Wash, half, and seed a medium sqaghetti squash, then spray the cut surface and roast face DOWN on a baking sheet for 45mins to 1 hr in a 400 degree oven. flip the halves over and allow to cool until easily handled. When cooled somewhat, I remove pulp and store in the fridge in a covered container until needed or proceed to make these balls using part of the spaghetti squash.

Combine all ingredients you wish to use and mash together well with a fork until combined. Roll into walnut sized balls and place on a sprayed seal pat or parchment paper on a baking sheet. Bake in a 375 degree oven for 30 to 40 mins, until drier than when they went in and light to medium brown.

Allow to cool 5 minutes. Eat hot or room temp. They have the texture of crab cakes and a wonderful flavor! I've made these twice in 2 days An Italian sauce or even BBQ! sauce would be good with these. I like them all by themselves!

I hope you give these a try the next time you have a spaghetti squash on hand. If you like things on the spicy side...consider using the hot Italian Sausage or add a little cayenne when mixing everything together.
