I found it!!!!! Haven't tried this but they look sooooo yummy.

1 cup splenda (I'll use whey low)
1/3 cup cocoa powder
1/2 cup cream
1/2 cup butter
1/2 cup peanut butter

Put into med sized pan and bring to a boil over med heat. stir while boiling about a minute

add:

3/4 cup unsweetened coconut (kroger has it)
1/2 cup flax seeds
1/4 cup vanilla protein powder
1 cup coarsely chopped almonds

stir together and drop by spoonfuls on a piece of wax paper and let cool an hour

makes 24-34 cookies

3 carbs
2 fiber
1 net carb
9 grams fat
3 grams protein
98 calories.

Can't wait to try these!!!

Those sound good. I think I'd use the whey low too, since I haven't had luck with cocoa and Splenda. I just might have to get some whey low & try them too. Let me know how they are. I've been wanting something chocolate lately.

I can't wait to try them. I'll use splenda in anything except something with chocolate. For some reason the chocolate seems bitter to me with splenda.

I wonder if Flax Seed Meal would work instead of Flax Seeds? And yes Junie-poo, you need to get yourself some Whey low!!! Well worth the $$$ in my opinion.

ok i've made these for the 2nd time, and everything is perfect except it seems to render out some oil/butter. could it be the protein powder? they taste fantastic, but as they sit on the waxed paper, oil leaks out of them.'

any suggestions? i'd try another batch w/o the protein powder, but i'm out of cocoa

Dinah,

Can't try to try these cookies,they really sound good. Everything is on hold at my house because of the remodel of my kitchen.Heck I have a new KA mixer in the box on the floor of my living room.I asked my dh is he thought we would ever get this done and put back together,what a MESS Shocked .Anyway my ???? is, I have heard so many talk about whey low,is it not like spenda then?and I did get the feelin that the splenda and chocolate don't mix,right? Anyway ,when I get back in the swing of things I what to totally re-stock my kitchen with all these wonderful products and spices.

i don't care for splenda w/ cocoa, or chocolate. for baking and anything cocoa i use the whey low. for koolaid, or tea, or anything like that, i'll use splenda. the cheesecake is wonderful with the splenda too.

AND as i've said before, the wheylow gold is perfect for brown sugar. love it in georges sweet honey mustard.

good luck on the kitchen. just think how nice it will be when it's all done! how are you cooking in the meantime?

Mornin Dinah,

Still cooking as I still have my stove and frig.They should be here to tear out at least the upper cabinets so the sheetrock guy can come in and fix the walls(I had wallpaper and wainscoating) and also take that darn popcorn off the ceiling. It's just a mess around here having boxes of stuff laying all over in the living room,everytime I need a pot or pan or spice I have to figure out where it is Rolling Eyes ,but I'm sure I will love it after it gets all put back together. (when ever that will be,lol!!!!)

I just ordered some Whey Low yesterday. I hope it is what I am needing to add that touch of sweet when I need it. I won't use aspertame. I had lost about 30 lbs. a few years ago until I began to add sugar free candy to my diet. I didn't realize till later that it was that change that stopped my weight loss and caused my hunger to return. I react the same to Splenda as I do sugar. I am trying to re-establish my LC ways and I am hoping I will not react to Whey Low the same way. I am looking forward to trying it. Donna

Dinah, do these have to be refrigerated. I am looking for a sweet I can make and take on a trip to ward off sweet temptations. If I have something sweet with me, I can eat it instead. Donna
