Hi, looking for a tasty low carb recipe for pimento cheese. I did a forum search to see if this has already been requested or addressed but got no results.
It can't be terribly difficult to make & seems to me it would be fairly low carb to begin with. Cheddar cheese, maybe some cream cheese, pimentos & seasonings.
Thanks in advance if anyone has a recipe!

YES , I can finally contribute something . This is my Mom's recipe and I was just thinking about it the other day. Haven't had it in ages , but I remember how good it is. We used it for dip and for sandwich spread . Think I'll pick up some pimentoes and make a batch.
Creamed cheese Sandwich spread
3 egg yokes
3 T. sugar (Splenda for us)
Mix in pan , add:
9 T. vinegar
Boil until thick , stirring constantly.
Taste to be sure it's tart.
Mix hot mixture with :
1 4oz. pkg. cream cheese
1 small can pimentoes
1 finely chopped green pepper
Cool and enjoy . Makes a small batch. I'm sure you could add cheddar , but it really is good this way

I've whipped this one up a few times now & hubby likes it much better than any we've bought.
1 cup shredded extra sharp cheddar
1/4 cream cheese
mayo
salt & pepper
small jar chopped pimientos
Mix the cheeses & pimiento (with liquid), then add mayo until you get the consistency that works for you. I like mine a bit thicker, but hubby likes his a little thinner. Add salt & pepper to taste.

If you like pimento cheese you might also like this version I learned from my friend Judy in Indiana. Sorry but the measurements are guesses.
Swiss Dill
2 cups grated swiss cheese
half cup of mayo (more or less depending on preference)
SF dill pickle relish or chopped dill pickle
1/4-1/2 t dried dill
mix and let sit for an hour in the fridge. Use as filling or spread.
most pimento cheese recipes I'm familiar with look something like this (and there are a million variations in the South all claiming to be "the best")
2 cups grated sharp cheddar
1/4-1/2 cup mayo, more or less to your taste and spreadability (most use "dressing" like miracle whip or a "boiled dressing" recipe similar to miracle whip so you might want to add a pinch of SF sweetener to whatever mayo you use)
1/4 cup pimentos (more or less to your taste), drained and chopped
mix well and let set up for cheese to absorb mayo, may need to add more as needed to make spreadable.
optional ingredients:
worcestershire sauce
seasoning salt
celery seed, celery salt
paprika
mustard
another grated cheese, smoked gouda is popular
tabasco
cayenne
onion
pickles, relish |

Here's a recipe compliments of Paula Deen. I have made it and can say it's pretty tasty!
1 (3-ounce) package cream cheese, room temperature
1 cup grated sharp cheddar
1 cup grated Monterey Jack
1/2 cup mayonnaise
1/2 teaspoon House Seasoning, recipe follows
2 to 3 tablespoons pimentos, smashed
1 teaspoon grated onion
Cracked black pepper
Using an electric mixer, beat cream cheese until smooth and fluffy. Add all of the remaining ingredients and beat until well blended. It can be used as a dip for crudite or as a sandwich filling.
House Seasoning:
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder
Mix ingredients together and store in an airtight container for up to 6 months. |

This comes from another LC website (LindaSue's). My DH LOVES this stuff!! I make a double batch of it every time I make it. If you get pre-shredded cheese, you can mix it up in nothing flat. Dump. Mix. EAT!
Only tweaks I do are using onion powder instead of minced and I add about a half-packet of Splenda. That tiny touch of sweet really makes it extra good!
PIMIENTO CHEESE
3/4 cup mayonnaise
2 ounce jar chopped pimiento
1/2 teaspoon Worcestershire sauce
1/2 teaspoon onion, minced
1/8 teaspoon cayenne pepper
4 ounces extra sharp cheddar cheese, shredded
4 ounces mild cheddar cheese, shredded
Mix the first 5 ingredients; stir in the cheeses. This is best chilled awhile to allow the flavors to blend. Keeps in fridge up to a week. Serve with celery sticks or other raw veggies.
Makes about 2 cups |

This was one of my favorites from my childhood..
I would beg my Mom to make me a sandwich with this to take to school. for lunch..
Now to think this is GOOD THING on this plan.. yipppeee _________________

well, i used paula's recipe, but i got it way to salty, so i doubled everything except the house seasoning and it's still too salty. dang!!! i'm out of cheese and pimento's now, or i'd double it again..... it was pretty good with celery sticks dipped in it tho. _________________ Dingie Dinah

This really is the best pimento cheese recipe I've ever tried! You'll love it, and all the ingredients are lower carb to begin with! |
