Okay... so this is no where near as good as Rachel's cheesecake, but it's wicked easy and only a few ingredients...
Quick n'Easy Cheesecake
3 pkg cream cheese (8 oz ea), room temperature
2 eggs
1 c equivalent splenda (I use the liquid... zero carbs)
1 tblsp vanilla
1 tblsp lemon juice
Spray small springform pan with cooking spray, wrap pan in parchment paper and then foil, set aside.
Place large pan in oven with hot water, set oven at 350.
Cream the cream cheese, add other ingredients til well blended.
Pour into springform pan, place in water bath and bake for 30 minutes.
After 30 minutes, turn off oven and let sit for 10 minutes more, then open oven door and let sit for 10 more minutes. Then place in fridge to cool overnight (or as long as you can wait )
