From Paula Deen's show - looked so good - I deleted the reference to adding 2/3 cups of crushed potato chips to the top...I guess you could use pork rinds (yuck!).
2 cups cooked chicken breast meat, cubed
1 cup diced celery
1/2 cup slivered almonds
1/2 teaspoon salt
1/2 teaspoon pepper
2 tablespoons fresh lemon juice
1 cup mayonnaise
1 cup grated sharp Cheddar
Preheat oven to 350 degrees F. Spray a 13 by 9-inch baking dish with vegetable oil cooking spray.
In a large mixing bowl combine the chicken, celery, almonds, salt, pepper, lemon juice, mayonnaise, and cheese. Place the mixture in the prepared baking dish. Bake for 20 minutes, or until bubbly. _________________ Jenny

Sounds good!
I had been thinking recently that those seasoned almonds they sell for topping salads would be good to top casseroles. I got to thinking about it when pondering how to make the green bean casserole that ususally shows up at Thanksgiving. It seems like it would work well with the hot chicken salad too.
I'll have to give this a try! _________________

When I went to the Farmer's market, we went into an asian shop. They had a bag of dried roasted onions, that were nothing but onions! no seasonings or added stuff. I bought a bag cause they looked too good to pass up! I was thinking of using them for my t-giving green bean casserole. That is my oldest son's favorite side dish. I bet they would be good on top of this casserole too.

Hey Dinah ~ I've got those onions too, I buy them in an Asian store here. I do use them on my Green Bean Casserole. The brand I've got (and it's all written in well, not English!) is pretty greasy though - but they are so good! I have to stay out of them, cuz I could just snack the whole darn container gone...

| Made this last night. It was delicious. I doubled the recipe, added the broccoli and it fit in a 9x13. Had to bump it up for newbies like me. |
