I got this from Paula Dean's show on the food network.... modified a little bit for low carb version.
Had it last night for the first time... had to share it.
2 cups cooked chicken breast meat, cubed
1 cup diced celery
1/2 cup slivered almonds
1/2 teaspoon salt
1/2 teaspoon pepper
2 tablespoons fresh lemon juice
1 cup mayonnaise
1 1/2 cup grated sharp Cheddar
optional 1 cup broccoli
Preheat oven to 350 degrees F. Spray a 13 by 9-inch baking dish with vegetable oil cooking spray.
In a large mixing bowl combine the chicken, celery, almonds, salt, pepper, lemon juice, mayonnaise, broccoli, and 1 cup cheese. Place the mixture in the prepared baking dish. Spread the remaining 1/2 cup of sharp cheese on top. Bake for 30 minutes, or until bubbly. |

This is so good! I had it for dinner last night. I just love all-in-one meals. I threw in a whole bag of frozen broccoli and didn't worry about fixing a side of veggies. I had forgotten that I put almonds in it (I even went to the store for them ) so when I took a bite the almonds were a yummy surprise. I might even try this using sour cream instead of mayo someday. It was better than I thought it would be. I've already been thinking of making a second batch. This time 1/2 sour cream and 1/2 mayo. Yum!

I made today with 1/2 mayo and half sour cream and really enjoyed, nothing like one dish meals. My picky family loved

Made this again yesterday, and used 4 cups of chicken and 1 1/2 times everything else. It filled my 9 x 13 pan, and was a little "deeper" than the last time I made it.
DANG it is my newest favorite! I used all mayo this time, simply cause I forgot to sub out the sour cream! (hubby ain't too fond f casseroles with SC anyway)
Just had this for lunch, and I'm wanting more!
I'm with you KME, I love one dish meals too!
And I must say again, don't leave out the almonds! They are the best part! _________________ Dingie Dinah

Dinah, this is my new favorite too. I did sub out 1/2 of the mayo for sour cream last time and I must say that it was better with all mayo. It was fine with the sour cream but the flavor was better the original way. Definitely add the almonds! They are yummy little surprises in every bite!
