| I did part of the recipe tonight but just used heavy cream and butter. I drizzed French cream reduction on it. Delicious. |

This is the great thing about the Stellastyle WOL hvannostrand1 It is not so restrictive as Atkins is. If it is listed here, eat it till you are happy and enjoy! I do not count carbs! I learn what items I can have and eat freely and as much from them as I like. You too can do the same! Just look at the section on the homepage titled getting started and shopping and these should answer your questions in relation to what you can and can't have! | Guess what I'm having for breakfast??? Mock mashed potatoes! If you have not tried these, you HAVE TO! I used my food processor. while the cauliflour was cooking for 6 minutes, I put all the other stuff in the food processor. I also eat spray butter that has no calories and no carbs. These are really good!!!!!! George Stella is the bomb! I love, LOVE, LOVE these! |

I never need to buy spuds again...... a truly wonderful dish. I can imagine broiling these off with a little cheddar cheese for that "twice baked" flavor.

Sue, the food processor just makes it more fine and less "textured" I would assume if ya had to that you could use a mixer. Just first rally mix the devil outta the cauliflower first before adding the other ingredients to it. Add the rest and mix well. I am sure you will enjoy them! Have a Happy easter,

I just made these last night with frozen cauliflower florets. I also did not use the parmesan cheese.
They were fantastic! I, too, was hesitant at first, thinking that I would eat them but not particularly care for them.
I'm tripling the recipe next time! I'm having them for lunch, topped with some grated cheddar. _________________

I read somewhere here a long time ago that the mock mashed potatoes do not freeze well, and I think that they get watery when kept overnight in the fridge. Sorry _________________ You can get what you want in life, if you help enough people get what they want--Zig Ziglar

If we had a ROFLOL emoticon I would be using it! I prepared this dish one night last week and my husband is STILL raving about how good those "Twice Baked Mashed Potatoes" were! I never said they were anything different and honestly I never did say they were potatoes.
This was very good. I will make it a part of my recipe collection.
One slight problem is they were quite "soupy". I didn't affect the taste by any means but I was expecting the dish to be a little firmer and potato-y.
Still gets 5 stars from me though! As a matter of fact, we're having the leftovers tonight and that's what prompted me to come give my stamp of approval! _________________ Oney

Oney, ain't these the BOMB!!!! Every time I make this, I have to really practice self control, cause I can't keep from eating the whole thing!
The secret to keeping it from being "soupy" is to make sure the "potatoes" are good and dry. I press mine in paper towels, after I nuke them in very little water.

I have read this thread a few times and guess I must give these another try.Even though we love cauliflower,I made them and did not like the texture,to darn lumpy.I don't remember pressing them between papertowels either. I only have an electric mixer to.So how small are you cutting your peices,and are you kinda smashin it when you getting the water out of it???maybe a dumb ??? but I would like these to turn out this time.I really need to get more vegies in my diet.
