This recipe is from George's second book
1 cup Almond Flour
1/4 cup sugar substitute
1 egg white
1/8 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon vanilla extract(no sugar added)
1 teaspoon sugar substitute, for top
1/8 teaspoon ground cinnamon, for top
1. preheat oven to 350F and line sheet pan with parchment paper
2. Add all ingredients, except the last two, to a bowl and mix well with a wooden spoon.
3. Using two teaspoons, and to scrape the mixture off the other, place 24 spoonfuls in 4 rows of 6 spaced evenly apart on sheet pan. Then press each spoonful down slightly to make the crisps more flat in shape and about 1 inch square and 1/4 inch thick.
4. Sprinkle each crisp evenly with a mixture of 1 teaspoon of sugar substitute and 1/8 teaspoon cinnamon and bake for 15 min. or until crispy. Cool and serve or store on the counter in a covered container for up to 3 days.
