You country people out there remember the "wilted lettuce and onion" dish? I got some leaf lettuce, (about 1/2 a head) some green onions (1/2 a bunch using mostly the green tops). I tore the lettuce into bits and cut the onions into bits as well. I heated some olive oil (about 2Tbsp), a touch of bacon drippings (2 Tbs) , a teaspoon of vinegar and a tablespoon of butter. I heated all these up in a pot till boiling, added fresh ground pepper and salt (to taste) and then poured it over the lettuce and onions, tossed and served immediately. It was so good and I can't believe that I had forgotten about this wonderful and "legal" side dish that I will definitely be making again. Love those country recipes! Just spotted this one and it brought back great memories of my friends and family in Southern Indiana. If you eat bacon, try crumbling some up on top...lately my "aunt" has been using a touch of balsamic with the cider vinegar...

Don't know how I missed this one, but I had.
Yep, I remember wilted salad. I love to have it when I have fresh from the garden lettuce. Don't like the pepper tho. I just don't like black pepper. But that's me.
I've never made it using butter. Sometimes put a touch of Splenda in it. As where I'm from they often put sugar in it. I don't always tho.
It's good with fresh Spinach too. My sister usually adds chopped up boiled egg to her wilted Spinach salad. _________________ Billie

Im new to the site and reading up on posts and topics. Im glad i came across this one. My grandmother use to make this for us when we were kids. I absolutely loved it.
