This soup was a complete hit at my house. And most all the items are pantry items! I know that the recipe is a hit when my 14 year old heats up the leftovers on his own!!!

Taco soup
1 lb hamburger
1 small onion
2 cloves garlic
2 tbsp chili powder
1tsp cumin
2 cans rotel tomato's with green chili's
2 cans chicken broth (I used Beef Broth)
1 8 0z pkg cream cheese
1/2 cup cream
brown hamburger and then add onion and cook until soft then add garlic chili powder and cumin add the tomatos and chicken broth bring to a boil then addd cream and cream cheese (I soften my cream cheese in the microwave and it will blend in better) simmer for about 30 min and then serve with sour cream and avacodo slices. _________________ Dingie Dinah

What a coincidence ~ I was just at Linda Sue's site looking at this recipe after reading rave reviews about it on the low carber forum!

Sure looks good! Did you use the called for 2 cans of Rotel Dinah? I keep them on hand, but wasn't sure if that would be 'too much' Rotel or not... *Ü*

It was definitely spicy with 2 cans of rotel, and of course I'm a cumin head, so I doubled up on that.
If you don't like the heat, you could substitute one can of the rotel with diced tomatoes. I'm going to make this again this weekend, and turn the heat down a little, since I don't know how my post-operative tummy would like the spices.
It sure was good. I'd rate it up there with Dinah's chili recipe!!!

I just made this soup, but decided to sub diced cooked chicken breast for the beef. I added the chicken when I added the tomatoes, spices and creams.
Outstanding! You do need the avocado and other diced veggies to cool the heat down a bit.
Very easy, and pantry ready in my house~
Suggestions, don't add salt until you taste it. The Rotel tomatoes are salty, I used homemade broth with no added salt, and I did not need to add any more.
Next time I may try deep frying some low carb tortilla strips to add some crunch.
I do need to figure out how to make the cream cheese melt completely. I still had little white particles in my soup after simmering. Any suggestions on how to avoid that would be welcome. This did not impact the taste negatively, but it could look a bit prettier.
Dinah, thanks so much for posting this, and you are in my prayers for your surgery Monday. When you get to cooking again, and you may already know this, but if you toast the cumin seed in a fry pan before you grind it will add another dimension to an already flavorful spice.

THANK YOU!!! for reminding me of this recipe. I'd completely forgotten about it. Maybe it was cause of the surgery
I made a double batch last night, and when DH came through the back door, he was hootin' and a hollerin' cause he could smell it. He said he liked this better than my Dinah's Chili!!! (should I be insulted or feel praised???) DH and Son both had 2nds, and said I could make this any time I wanted!!
And it's soooooooo easy!!!!
BTW, this time I used 1/2 regular Rotell, and 1/2 "mild" rotell. Didn't burn on the way down!!! LOL _________________ Dingie Dinah

I just saw this, what I did was nuked the cream cheese on 1/2 power for about 3 minutes to soften it real good, and then just stir like crazy!!!! _________________ Dingie Dinah

Thanks for the tip on nuking the cream cheese. I will have to try that next time.
Yes, your recipe using chicken or turkey is the BOMB!
I'm with you on mixing the "speeds' of Rotel. I like to mix them as well, but when I use just the regular, I just add more cold, diced avocado and fresh tomato to cool the spice heat down.

| It's the best isn't it? And nuking the cream cheese did do the trick. Going to be a staple in this house, especially since I am the only one doing low carb, I can have this when they have there other stuff. Really helps cause it is so filling. Love it!! |
