Dinah,

Made the taco soup tonight for dinner,both my dh and myself really liked it.He cheated alittle and put doritos and sour cream in his.Very YUMMY,said I could make this one again.

I made it over the weekend too, at my almost-15 year old's request. I couldn't find my rotell's in my deep dark canned good cabinets, so I used petite diced tomatoes (big can) and more chili powder and cumin. I tried toasting the cumin seeds, like someone suggested, and thought I burnt the little suckers!!! and they popped like pop corn, but I grinded them in my nifty little silver bullet and used it anyway. Wasn't "cumin' enough so I added more regular. It was good!!!!

I just made it for the first time. After reading about the problem with the cream cheese not melting completely I tried something a little different. I heated the cream cheese in the microwave for thirty seconds, as recommended. But I heated the broth and the cream in a seperate pot while the meat, onions, garlic, and spices were cooking.

Then I added the softened cream cheese to the broth and cream. I beat it with a whisk but it still had a lot of tiny lumps. Then I brought out the immersion blender and with a few quick blends it was perfectly blended! I think you could use a regular mixer and get good results, too.

I then added the liquid mixture to the beef/tomato mixture.

I added a little chipotle chili powder for some smokiness. I also used one can of Rotel tomatoes and one can of diced tomatoes. I wanted to adjust the heat with the chipotle chili powder.

It was delicious! A definite keeper!

double batch of this is bubblin' on my stove as we speak!!!! what a comfort soup. i'm just mad i forgot to buy avacados!!!! drats!

Hey Dinah! Very Happy I saw this last night and made it as I had all the items available and a pound of chuck I didn't know what to do with. It was great! Like you I did add more cummin and a shot of hot sauce too! Yummy! I also heated the cream cheese, put it in with the chicken broth and use the immersion blender on it for a perfectly smooth texture! I added a drop of sour cream and had some of my home made flax seed garlic and parmesan crackers with it. Thanks for another delicious recipe I have added to my keep collection! I made this this afternoon (very late lunch!) Of course I had to tweak it.


I am not a Rotel fan, so I never have that on hand. Instead I used a large can of petite diced tomatoes. (Opps this wasn't exactly what I thought they were. As I was dumping them, I noticed it said Petite Diced with Garlic and olive oil - so far so good - just extra garlic - OK. But then I looked at the label closer, it had sugar listed. Don't know how I managed to get home with those. I almost (evidently) always check for sugar on the label. Well, hopefully they didn't put much in, cause in it was a goin.) And I added a sm can of green chilies.
I only used 4 oz of the cream cheese. I figured that would be enough creaminess for me in the soup (I was right, next time I may try 2 oz. I can always add another 2 oz if I find I need it.) And I didn't add the cream.
I had some pork broth & some chicken broth in the fridge from some other dishes I'd made, so I used them instead of the chicken or beef broth called for. (So next time it will have a slightly different taste due to the diff tomatoes & the broths, but don't think it will be highly discernible.)
Oh, I used the imersion blender to blend my warmed cream cheese & broth also, and the spices. Next time I will probably use chopped or whole tomatoes & blend them in with the broth & cheese. I prefer that over the tomato chunks in my soup.

I added shredded cheese (Colby/Jack) & a dollop of sour cream to my bowl when I ate it. Must say it is prurtty tastey!! I had another helping, but this time didn't take time to add the cheese or sour cream. Still good!

I have 5 lbs of hamburger in the fridge needing to be cooked so was thinking I might make this tomorrow and maybe some chili....or some lasagna. Want something to keep be from having to cook for a couple days

denise, this freezes really well. Tyler and I just had this for dinner tonight. we both have a virus (he started it!!!) and it sure did feel good going down. super simple to make too.

Good! I will be making more and freezing it for those games we must attend with my daughter for a quick and easy solution as to what to heat and take with us in a mug! Taco soup, football night, my wife beside me and my daughter on the field cheering them on and a lap blanket, who could ask for anything more,

Wow this looks good, especially since the nights are getting cooler!!!! I am going to make it for sure...hey, I could bring it to the camper and eat it by the fire...and what a great solution for a quick lunch to reheat. I trust you guys, so it sounds like a keeper! Wonderful soup! I made it today just as the recipe calls for, and it's great. Made with chicken, it would be like creamy tortilla soup (minus the tortillas). I frequently make 'tortilla-less tortilla soup' but the creamy version was always missing something; now I know what--cream cheese. Next time I make tortilla soup, I'm going to add the cream cheese---Thanks for the recipe!

If you take a ladle of the hot broth out and whisk it in a bowl with the cream cheese and cream, then you can just pour the cream cheese/cream into the soup pot and it mixes in perfectly and effortlessly.
