I LOVE this too! I made a DOUBLE batch yesterday and it was good! I added in green pepper and some extra cummin. I also used the 5 blend shredded Mexican cheese on top for a garnish along with the sour cream and NO I still ain't going to try that green thing called an avocado. The last green thing I ate made me sick as a dog! (Olives Confused ) Anyways, wonderful soup that has been to the mining academy for five days in a row now and when I open my thermos and pour me a cup at 11AM, those people go crazy and fill their faces full of nothing but carbs at 12PM for lunch. They then set there heads bobbing and falling asleep while I pay attention! Another good thing about Low carb WOL, we stay energized and awake for safety's sake,

Making it now as I type and the house smells so good! As you can see, I am still addicted, so good in a thermos and really satisfies your craving for a hot meal and very filling! If you haven't tried it, you have 2 options, go make it or come on down, it will be ready in about 30 minutes,

oh goodness, just made a HUGE pot of this soup. I took davies advice and added a diced large red pepper, a green pepper, an onion, and a jar of ortega chunky salsa. oh yeaah and 2 cups of a pepper-jack type shredded cheese. this time i used beef broth.

it reminds me of a combination of taco soup, and my chili!!! My family raved about it, and I've got plenty for leftovers! Only thing is, I ran out of cumin!!! dang it!!!! didn't add as much as I wanted to.

I used 2 1/2 pounds of ground beef, a large can of petite diced tomatoes, 2 cans of tomatoes w/ jalapeno, garlic powder, salt, pepper, chili powder, cumin, and beef broth. then i added 1 cup cream, 2 pkgs cream cheese and 2 cups of pepperjack cheese. i almost had to drag out a second pot!

Anyone wanna meet me for lunch tomorrow???? I'll share!!!!

I have a question, I love this soup, in fact I think its addictive!! But I kindof stopped putting in the cream cheese cause I think it gets a funky pink color for me, does that happen to anybody else??

I don't mind the color, it comes from the tomatoes. I don't think it would affect the flavor to leave out the cream cheese, what do you think? I just like the thickness it gives it.

I made the soup using left-over diced turkey. Yum Very Happy Almost reminds me of a Cajun soup that is popular down here.

Well you are right about that, as far as it isn't as thick, but it still tastes mighty fine!! I knew it was the combo of the tomatoes, was just not sure if somehow maybe I was doing something wrong to make it pink (wouldn't be the first time lol). Anyhoo, its not as thick but I like it w/o the cream cheese, I make quite a bit and freeze it in individual portions, for me and my daughter, hubby doesnt care for it, and it sure helps on those nights I come home late and am starving, just nuke and there ya go!!! Love it!!! Oh and I always put a dollup of sour cream on top and if I have it some cilantro, yummm!!!!!!!!

I make this every week with shredded cooked chicken and chicken broth and freeze it in individual serving containers for lunches. Can't believe I've not tired of it yet! Must be the Mexican shred cheese and dollop of sour cream that makes me think I"m cheating Smile

Very excellent with a slice of David's Coconut Cheesecake as a chaser! Very Happy
