Hi everyone... cool day today and WINDY.. So far so good on the eating scene. Biggest Challenge (my weakness) is the portion control. Made the Breadless Bread pudding yesterday and am trying very hard to keep the portions small. My DH is also now following this WOE so at least the foods I fix are for both of us!
B - 2 eggs and coffee
L - small piece of steak, speghetti squash, Bald Calzone, water
D - ? left overs from steak, veggies
S - bread pudding

Hey All! Finally made it back to the computer! I've been busy all week end... good busy, but busy and now here it is the end of the week end already! What a gorgeous day we had here in Massachusetts!
Jen, congrats on the pound down, that's GREAT!!! And good job staying away from the sugar BTW... how do you make your beef stew???

Kath...of course painting that porch counts as some exercise! Great job with the exercise routine... I'm starting in on mine again tomorrow. And I know the cheese slows me down, as do any type of nuts which I've had recently... but I'm cutting them out for a while.
Anyway, here's my menu for yesterday...
Saturday
B = 3 c coffee as usual, 2 scrambled eggs
L = out shopping, so I had an Atkins endulge pnut caramel bar
D = baked haddock and shrimp (3), steamed broccoli, butter, unsweetened ice tea w/liquid splenda
S = leftover rotisserie chicken, another endulge bar (I am not buying any more of these... I know better, they are frankenfood and they are addicting!)

I'm back. Had a great visit with my Mom.
Stayed with the plan and Mom never noticed (unless you count the pie, but she didn't bake it so I changed the subject)

Up late working on thesis, not sleeping well anyway. thought I'd write up the stew recipe
Beef Stew with vegetables
Serve 6-8
2lb beef stew meat cut in 1-2 inch chunks
2 T oil (olive, bacon drippings, coconut ok)
salt and pepper
fresh herbs - a few stalks, thyme, savory, rosemary, parsley or combo
1/2 cup red wine
1 t better than bullion and 2 cups water or equivalent amt stock
1 cup diced tomatoes with juice, or tomato puree ok too
2 cloves garlic, smashed or at least chopped in half
1/2 medium onion chopped
optional:
1 carrot, peeled and chopped
2 celery stalks chopped
2-4 inches of daikon radish peeled and chopped
4-6oz fresh mushrooms sliced
Optional also:
a touch of xanthan gum or other LC thickener
salt and pepper meat. brown meat in oil in dutch oven. May need to do this in two batches so that meat browns, not steams. toss meat back in pan and add onions and garlic. Cook for 3-5 min then, deglaze with red wine. Add bullion and water. Toss in tomatoes, herbs. Cover and place in 325 degree oven for at least 2 1/2 to three hours. If using optional ingredients, add them in last half hour of cooking then cook in oven until veggies reach desired tenderness. Remove herb stalks before serving. Tastes even better next day.
Serve alone or over cauli-rice, cauli-spuds.
with all optional ingredients I got a carb count of 8 grams, with 2 grams of fiber for 6 net carbs (using 6 servings). Its really filling so it turns out I've been eating smaller portions so I think it makes more like 8 servings, and I have not re-run the nutritional analysis.

Sammy... great job with staying on plan - WAY TO GO!!!
Kath... I LOVED it when my DH was on this woe... it made it so much easier. He's not picky so he eats what I fix, but... the snacks I have to keep in the house for him (chips & popcorn!GRRR!) are what get to me. I can resist, but it was easier when they weren't even in the house!
So... I kind of blew it this morning... I TOTALLY underestimated how long it would take me to get dinner in the crock pot, fix the dog stew (my dog has seizures so is on a special diet) and get my lunch together...soooo... I don't have time to exercise this morning. Tonight, I plan on fixing my lunch and getting my clothes ready so I don't have anything else pulling my attention away from exercise! That said, here's my menu for yesterday!
Sunday
B = 3 c coffee as usual
L = red clam sauce stew (home made)
D = 2 slices meatloaf
S = 2 of those darn Atkins Endulge bars which totally threw me out of ketosis and are now a thing of the past in this house!!!
Didn't weigh this a.m., I forgot Tuesday is my weigh in day.

forgot to note in stew recipe that you should take the herb stalks out after its done cooking and toss them before serving.
Today going pretty good. feeling a bit of PMS and things a bit hectic but stayed on plan. Hope everyone had a good weekend. So far today:
B = breadless pudding and sausages
L= curried chicken salad over lettuce
S= one piece of cheese (while cooking dinner)
D= oven bbq brisket (the DH has been cooking it all day. mmmmm), LC broccoli mushroom casserole, LC almond cookie

Hi everyone. Had a good day. Not very hungry today. Last night I made the chicken broth for dinner tonight. Over the weekend, my mom taught me how to make her egg noodles. So it's chicken noodle soup for the family.
B - egg with a little leftover carne asada
L - 3 falafel with little taziki (sp) sauce and tomato. Didn't eat the lettuce because of the e. coli scare here in CA.
Water
D - Chicken noodle soup (minus noodles). My soup will have extra veggies.
Jen, your beef stew recipe sounds great. I think I'll try it in the crockpot.
Shannon, can't remember where I read about your son moving in next door, but, congrats on the move. I always love to read your posts about your ds and ddil. The love always shine through!

Hi everyone! Thank you for starting this challenge.. it seems to be helping me stay on task. That is what I need. Today has been a good day. Exercised this morning before work. Able to walk on the treadmill for 40 minutes.
B - 2 eggs fried ..
L - small piece of steak, cucumbers in brine - Sweetened with liquid splenda, small helping of breadless pudding
D - hamburger patty, rattatoui (?sp), cucumbers in brine
lots of water..
I agree -- I think your beef stew sounds terrific Jen. Now that the weather is turning cool, it should fit the bill!
Shannon -- my biggest problem is my husband loves the nuts -- he mixes different kinds together and then rations them in little plastic bags (2 ounces each). I am afraid I can't just eat one bag -- I will crave them and can't stop at one hand full!.. But so far since the challenge, I have resisted even one nut!!! Hopefully I can maintain my resistance!

Hey There! Happy Tuesday!
Okay, so I weighed in this morning and was very disappointed to find I haven't lost any additional weight since last Tuesday. THEN I realized, hey, guess what??? It's THAT t.o.m.! Alrighty then, so I figure water weight is worth at least 2 lbs so staying the same is not such a bad thing! I'm sure the weight loss will show up next week!
Anyway...Jen, your menu looks great, can I come over for dinner sometime?
Sammy... yep, my "baby" boy and "the daughter I never had" are moving in next door and I am very, very blessed... just love 'em both so much! Lot's of work in store for the next few weeks, but they'll be in by Christmas and that will be a very wonderful thing! BTW... e-coli scare here in Mass too...so I'll be missing my lettuce as well just to be on the safe side.
Oh Kath... I feel for you... I can't "do" portion control with nuts either! A few actually help me lose weight, but more than that and they're a hindrance and 99 times out of 100 I'm a nut for nuts and cannot control my portions!
Debbie... where are ya Girlfriend... we miss ya!

I`m here!!!! My daughter was sick all last week with the flu.She finally got better on Sunday.Very stressful time.I made some bad food choices yesterday.But, today is a new day. So,for breakfast I made some of george`s pancakes. I`ll post later what all I ate today.I noticed you`s don`t eat snacks? How do you do it??Don`t you get hungry in between meals??Just wondering. Deb, I'm so sorry to hear your DD was sick...glad she's better now.
And you are completely correct... TODAY IS ANOTHER DAY! And you can make good choices today! My DDIL told me that she read somewhere that if you did something for 21 times, (exercised 21 days in a row for example) it becomes habit... so maybe if we concentrate on making the right choices 21 times in a row, it'll become habit? Wouldn't that be great if it was that easy!? As for the snacking, it's actually better for me to snack, it keeps my metabolism going, but being at work all day it's hard for me to think about eating. Low carb takes my cravings away and when I'm at work I only really think about food at lunch time. When I'm at home I usually snack in the evenings (and on the week ends) unless I'm too busy. Hi everyone!
Great to see folks participating! This has really been helping me keep things in check.
Shannon and the rest of y'all are welcome anytime for dinner - might be a heck of drive over though I love to cook! But I also love when other folks cook too - did I see some red clam stew? mmm. mmm.
Yesterday was a good one might have had a bit more brisket and broc casserole than I intended, but still staying in range. Today:
B = Breadless pudding, decaf tea w/splenda
L= leftover beef stew and cauli - gotta freeze the rest getting a bit bored.
D= chicken paprikash with diakon and green salad w/ walnuts and rasperry vinagarette.
water= way more than 64 oz
vit/supp= yep, both
exercise= 20 min walk
As far as snacks go...I snacked a lot in the first two months, now that I'm moving into month three I don't seem to need to snack as much and I don't eat anymore unless I'm really hungry - I have a lot of problems with eating just to eat, and eating due to stress, so now I wait until my stomach says, "yo! how about a little something down here!"
I think one of the reasons too is that I don't have a lot of outside stimulus to trigger eating: I'm watching less TV because I spend a lot of nights working on my thesis, I don't watch the DH snack, and I'm out of the office a lot during the day in meetings where there is no food/no snacking. I keep snacks in the house like raw veggies, nuts, homemade LC baked goods (usually in the freezer), cheese, pepperoni, smoked turkey, etc. but find myself eating less and less of them.
not opposed to snacking, just don't feel the need to.

B-2 cinnamon pancakes w/ sf syrup & a little whip cream. Water
L-a salad w/ tomatoes,turkey, blue cheese dressing. Water
D-1 cube steak w/ steak sauce, & some mixed greens. Water
S-cream cheese with whip cream & vanilla
S-a few pork rinds
S-maybe 1 sf popsicle later

Good Morning Sunshine!
Well went out last night with DH and found a COMFORTABLE / sexy (as DH says ) pair of shoes for the wedding and DH found a pair of boots, so it was a successful shopping trip. Had dinner at TGIFridays and stayed legal and did not feel deprived at all!
Jen, my red clam sauce/stew can be used over pasta or spagetti squash or eaten as a stew... it's wicked easy to make, but time consuming... if you want I'd be more than happy to post the recipe for ya... just let me know.
Deb, your menu sounds great... what kind of steak sauce to you use? I can't find lc A-1 anywhere anymore and I love it with steak & eggs! I should probably look around for a recipe, I guess.
Anyway, hope everyone has a great day and I'll chat more later!

Sheesh. I'm not even sure what day it is...been too busy. Breakfast was a challenge today - had an 8AM dental appt for a filling. Still numb. Did not use as excuse to eat off plan. Drank cooled tea and ate two protein cookies very very carefully in little bits. Hope that this will wear off by lunch.
Wednesday
B=2 protein almond cookies, tea w splenda
L=salad with chicken breast walnuts and raspberry vinaigrette
D=big antipasto salad from the local pizza place - DH wanted a calzone for dinner. My salad had lettuce and lots of yummy italian meats, cheese, olives and pickled peppers.
Exercise plan is not going too well, but I have been walking some during the day 15-20 min. Its really not enough for me to see a lot of benefits, would like to get back to 45 min walks.
Shannon - post the stew when you have time. No hurry tho' - got my menus planned through Monday.
