Ok so I just made George's Crab Stuffed Mushroom's as a dinner; however, I couldn't help but add my own twist!
Now I don't measure when I create my own things so let me guestimate...I added 1-2 tablespoons each of red and green bell pepper (minced).
With about 3-4 minutes left of cooking, I added shredded mozzarella cheese. Then I made a garlic, lemon, butter to dip the mushrooms in.
OH MY GOSH, it's sinful, how can this be low carb. The veggies and mozzarella added about 1 carb (I guess) I made sure I used >1 gram of carb mozzarella.
I had some stuffing left over so I made a Hot Feta/Crab/Artichoke Dip (add to the left over crab mix...oh 3/4 cup mayo, 1/2 cup parmesan, 12-14 ounce jar artichoke hearts (minced)...Bake at 350 until golden brown on top.
I feel like I am becoming quite the chef!
