Hi everyone,

How is everybody? Still sticking with the challenge? Today for breakfast I had 2 eggs with cheese, 4 slices of bacon and one piece of cheesecake. Then for lunch I had about 12 of Paul's recipe for stuffed jalapenos. I just cannot stop eating those. Weekends are really a tough time for me to stay on track. I just eat constantly. So I am planning to do alot of cooking. I am sticking to it and I am going to make it in this challenge (we all are). At least my constant flow of food this weekend has all been SS.

Water-32 oz. so far
1 diet coke with splenda

Oops forgot to take vitamin

Hope to hear from you all soon and have a good weekend.

Hi everyone,
Sounds like you`s are doing great!!!! Jen,have a safe, fun trip & stay away from the B-day cake.

Let`s see so far today...I`ve had scrambled eggs for breakfast,a salad for lunch, for a snack I had a PB cream cheese muffin w/ whip cream...if you havn`t tryed these yet...do..they are my favorite.And for supper,I think i`m having chicken w/ alfredo sause w/french style green beans in it for the pasta. I hope all has a awsome weekend!!!! Debbie

Hi there

Congrats to all of us who stayed on track today. Well i slipped a little bit. The days started fine with one boiled egg. Had an extra large salad for lunch. Mostly organic greens, hlaf a cuncumber, a little bit of tomato and some crubled smoked salmon on top. 4 gms of carbs in 2 tbsp dressing. Abd then i had a friend over for dinner. I think i had a couple of teaspoons of rice and had some chickpeas with sour cream. I wonder how bad is that???????

well i am not gonna kill myself for it. tomorrow is another day when i know i wont cheat. I love ya guys for being here and listening. My little son who is not quite 2 yet, doesnt really let me use the computer. When he is up, he wants to be here and when he is apleep i am usually fixing the house so i dont come online very often. So sorry for not cecking in often enough.

see you all tomorrow.......hopefully you guys will have a great cheat free day.

Jia, I am not Heather, but yes cheesecake is by far, in my humble opinion, one of Rachel Stella most appreciated contributions to this site.

Go ahead and make one, and if ya send David a piece or two to test, I know he'll be happy (and very thankful) to make sure it is okay...and while you are at it, I think I can find the time to help test too, so it's okay to send me some too.

I promise you will not be disappointed it is honestly on of the best tasting cheesecakes I've eaten, even including those before low carb.

Jia,

The diet coke with splenda is sold at most grocery stores around here. The box looks just like regularDiet Coke only there is a small yellow oval on it that says Splenda. I made the new york ricotta cheesecake but I used the crust recipe from the praline pecan pumpkin pie. I also added aboout 1/8 tsp. of maple extract to the crust. The taste is amazingly similar to graham cracker crust. I will post the link to the crust recipe and you see Mark posted the one for cheesecake. The cheesecake is amazing. It is in George's cookbooks which if you don't have you should get. It really helps to stay on track with so many easy, excellent recipes to experiment with.

That's the recipe that I used for the crust. Today I am going to get some strawberries to put on top of my cheesecake.

I am about to start jumping up and down. I am so exciteeeedddddd!!!!!!!!!!!! You guys just turned my pathetic, PMSy depressing day into a good one.

Hi All!

I'm back from the weekend. Not going to post all my menus. Just going to say that I did NOT eat birthday cake. I sayed mostly on plan; did eat half a biscut on Sunday Embarassed and had several Miller Lites on Saturday night (like 3). Considering the carbs I was surrounded by all weekend including what looked like a garbage bag of tortilla chips, I think all went well. Smile

Apparently several of my in-laws have been inspired by my weight loss, and also by my sister in law who is working on losing her baby weight. They are not doing low carb; they are doing WW but so far have each lost about 10 pounds in the last two months. My bro-in-law has lost the most, but he's a a big guy and has the most to lose. I've talked with them about low carb, and I think they were a bit envious of the bacon I was nibbling on much of the day Saturday, but they all feel like they need to be able to have bread, rice, potatoes and "regular" desserts. oh well.

Today's Menu:

B - bacon and yogurt with spenda
L- Chicken breast with jack cheese and cucumber/pepper/avocado salad
S- 2 slices ham, one slice cheese, 1/4 of a red pepper, SF ice pop.
D- Tuna steaks with asparagus, LC cake with LC ice cream.

Vitamins - Yes!
Water - 50 oz

hi friends!

i have been M.I.A. for the past couple of days and i have missed u! i came down with a wicked cold on saturday. so the weekend was yucky. i still tried to eat right though. i went to the dr today and i have a bad sinus infection. i feel like crap. but i got some meds, so hopefully they will start working and i will feel better soon! i haven't exercised of course. can't wait to start doing it again! talk to u all later!

Jen,I say you did pretty good,considering all the temptations around you.I havn`t had the cheesecake yet.But,I love the cream cheese peanut butter muffins!!! Robbyn,I hope you get to feeling better real soon!!

hi debbie! good girl on no cheating! thank u for the well wishes! the dr. told me i have a bad sinus infection. i knew that. she gave me meds so hopefully tomorrow i will be feeling better!

i haven't had the chance to read all the posts that i missed. i'll try to go back and do that.

Everyone is doing great! I know that I am doing better just having to think about this and check in. Thanks for the support. I won't be weighing in until Saturday so I don't know if this is having any immediate effect.

Today's menu:
B - eggs with cheese, green tea with splenda, turkey sausage
L - chicken breast with jack cheese
S- 2 LC tortilla wraps, half a red pepper, with guacamole
D - 2 hotdogs with cheese and bacon, SF ice pop

OK, not the best low carb day - I need more veggies - but overall not too bad either. Totally SRESSED and ate my way through the night.


On a different note: the DF GOT A JOB! yea! He has been off work since last June. Although he got a severance package and deliberately took some time off, he thought he would have found a decent job by Dec-Jan. Its taken a bit longer, but he goes to work on April 16. I can work at home again in peace! Laughing

hi all! i'm doing good! feeling a little bit better today with a couple of doses of meds in me! hoping to feel tip top in a couple of days! have not exercised, but that's ok. i'm not pushing myself while i'm not feeling the greatest yet!

hi jen! that is soooo great regarding DF's new job! way to go! looking for work is always such a sressful thing! now u can both feel at ease! hugs and kisses to u both!

Jen- congratulations of DF's job. That had to have been stressful for him.
Robbyn- I'm glad your feeling better.
Jia- how was the cheesecake? Did you have time to make it yet. It is so good and I am not a baker.

I didn't post any of my meals for Sunday or Monday but I did stay on track. I did have 2 Bloody Mary's made from scratch so I don't know if that's cheating or not. The only carbs are from the tomato juice. However, normal cheating for me would be 2 orders of crab rangoon plus a dinner with rice or pizza so I feel pretty good about that.

Today:
cauliflower and broccoli salad, cheese cake with 2 large strawberries sliced on top.

Lunch was a La Tortilla green onion flavored wrap (3 net carbs) filled with ham, provolone cheese, lots of shredded lettuce, some tomato, Mr C's restaurant italian dressing (0 carbs) and mayo. It was so good. I have been craving a sub sandwich and it really hit the spot.

Dinner will be Ribeyes on the grill with green beans and a salad.

Hope everyone else is doing well.

I still haven't weighed myself which is hard not to do. But I am going to try to wait til the end of the challenge.
