olive stuffed chicken breasts
1/3 c pitted green olives(or black olives)
2Tbls chopped fresh parsley
1 glove garlic minced
4tsp olive oil
4 bone in chicken breast halves 2 1/2 lbs
2 tsp dried marjoram
1/2 tsp salt
1/4 tsp pepper
1 lemon cut in 8 wedges
position oven rack in top third of oven. Preheat oven to 425. Coat roasting pan with cooking spray. Combine olives,parsley, garlic and oil.
Spread 1/4 of olive mixture over chicken meat under skin of each breast half. Combine marjoram, salt and pepper, sprinkle over chicken. Place in roasting pan
Squeeze juice from 4 wedges over chicken. Arrange remaining wedges around chicken in the pan. Roast until no longer pink near bone, about 25-45 mins.
