This is a recipe my sister emailed to me (she is on weight watchers) so at the bottom I added some changes I made. It either came from weight watchers or cooking light magazine. It is delicious and looks so good with the dark red from fire roasted tomatoes and the dark green spinach. I don't care for cooked spinach usually but it was yummy.
1 medium yellow onion - chopped
> 1 T minced garlic
> 10oz sweet italian turkey sausage- casings removed
> cooking spray
> 2 cans chicken broth
> 1 can fire roasted crushed tomatoes
> 1 can canellini beans
> 2 cups fresh spinach- stems removed
> 1 t oregano
> 1 t basil
> salt and pepper
> fresh grated parmesan or romano cheese

> Saute onion in cooking spray for 2 minutes then add garlic and saute 1
> minute more, add sausage and cook until no longer pink. Add tomatoes,
> broth and beans. Simmer 5-10 minutes. Add oregano, basil, salt pepper

I used Johnsonville Mild Italian Sausage instead of turkey sausage (I absolutely hate turkey) and I used black soy beans instead of canellini beans because that's what George uses in his recipes. Hope you like it.

| sounds good but i would leave out the beans for my self and figure out how to make it more low carb . sue |

I was looking for something to make with some TN Pride hot sausage I found in the fridge, so I made a lazy spicy version of this---just the hot sausage, a can of hot rotel, chicken broth, garlic powder and spinach. Pretty tasty for a few minutes work. Right now I'm having a bowl with a little Prairie Farms Jalapeno dip mixed in (no cream or sour cream). _________________
