I can't believe George misspelled the name of that recipe in the new book! Geez Louise George!!!
my question is this, do you think ground beef would work instead of the beef tenderloin? Since I'm not about to take a 2nd mortage for the beef, I'm wondering if GB would work.... Whatcha think? _________________ Dingie Dinah

Since this is my favority George Stella recipe, I post an answer.
I think ground beef would, but you would need to really really drain the meat. The fat in the meat tends to break down the cream (gravy).
When I make it, I use a cheap cut of beef, like a mock tender or sirloin. Again, the less fat the better. The sauce, mushrooms, and wine make it taste so good, that the cheap cut of meat doesn't matter. And as with the hamburger, a rib eye or something like that has too much fat and breaks the gravy...at least that has been my experience.

I knew this was your favorite Mark, and figured I'd hear from you!
I always use ground chuck, and there is less fat, but maybe I'll look for a cheaper cut of something, like you suggested. What is a "mock tender"? Not something I'm familiar with, I don't think.
Can't wait to try this. Maybe I'll defrost some chicken breasts and try it with that. That is the substitution suggestion George makes in the book. hhhmmmm might be worth a whirl!!! Sounds like dinner for tomorrow!

Dinah, I probably have the name wrong, but it is a cheap steak that kind of looks like a ribeye, except its about 3-4 in diameter...I thought they called it mock tender steak...but honestly it may not even be close to the name...my old brain likes to trick me every now and then!!!
My secret is to go to the meat section and look for the cheapest per pound piece of meat that looks like a steak...then I buy that.
