OK folks, can you tell I have been working on low carbing some recipes that I used to eat all the time? I LOVE cajun food and have, through trial and error and the inspiration of the whole concept of George's "Mock fried rice", found a couple of recipes that work for me that taste really good and are low carb allowed foods! This is a good comfort food and very filling! Let me know if ya try it and what ya thought,
David's "Mock" Cajun Dirty Rice
Ingredients
4 cups raw grated cauliflower (or processed in FP till fine)
1 pound of sausage
1 pound ground beef (NOT ground chuck)
1 Onion (finely chopped)
2 Stalks Celery (finely chopped)
1/2 Green Pepper (finely chopped)
2 Cloves fresh Garlic
1 Cup fresh Mushrooms (variety is your choice or may use canned)
1/4 Cup Chicken Broth
1/4 Cup Butter
1 Teaspoon of Red pepper
1 Teaspoon each of Salt and Pepper
Fresh chopped Parsley (for garnish)
Dash of Hot Sauce
Directions
Fry the sausage and ground beef together till done, add in the onions, green peppers, celery and garlic sauteeing until the onions are translucent and the celery is tender. Drain Liquid, add the butter, chicken broth, spices, mushrooms and cauliflower in skillet, stir till well mixed, cover with a lid and allow to cook on medium for 40-45 minutes stirring occasionally till cauliflower is tender and moist. Sprinkle with hot sauce, add in chopped parsley, stir and enjoy! This is great with cajun pork chops! Take care,

| I am ALL OVER this! Was missing dirty rice a few weeks ago and this would be perfect with my cajum baked fish. Gracias David. |

You're welcome Jen. As you know my weakness was Bojangles Dirty rice and I tried many times to come up with a "just right" LC recipe to replace it. This one did well for me. Let me know what you thought after you try it,

David - it turned out great, despite forgetting to buy ground beef at the store. My cauliflower hating DF loved it! Tasted great with the fish and I think he took the leftovers for lunch today. lol.
When I go back to eating dairy (at some point) I'm going to try making my imfamous seafood dirty "rice" with cauliflower. Will try and post a recipe despite my inablity to measure anything when cooking. |

This is a great dish. My family and I tried this a few days ago and it was a hit. I served it as a side dish but it has so much protien I think I will try it next time as a main dish with a salad on the side. Thanks so much for the recipe since I was really missing the "real" version. Rachel |

Rachel, I am so glad you enjoyed it! For me, many times the hardest thing about this WOL is coming up with recipes that are close to the ones we are still attached to mentally. This "dirty rice" was definitely one of mine so it took me a while to get it "right" but it is pretty close and very filling. Thank you for the comment, I appreciate it! Take care and eat well,
