Broccoli Cheese Soup

I had this for dinner last night and thought I'd share. It's one of my favorite recipes. I've had it for years, and sadly don't know where I got it from so I can't give credit to the creator.

Add chunks of cooked chicken and you're done eating for HOURS!

Broccoli Cheese Soup

10 - 12 oz broccoli, microwafe until crisp tender
8 oz block of cream cheese
1 can of chicken broth
6 slices bacon, cooked crisp and crumbled
1 med. onion, diced
2 cloves garlic, chopped
2 Tbsp. butter OR bacon grease (my favorite)
2-3 cups shredded cheddar cheese (sharp is my favorite or a mixture of your favorite cheeses)
Salt and pepper to taste
Dash of cayenne pepper (optional)

Whisk cream cheese and chicken broth together over low heat until smooth. Meanwhile, in a pot sautée onion and garlic in 2T. butter or bacon grease until almost transparent. Add broccoli and cook for 10 more minutes. Add cream cheese/chicken broth mixture and 2 cups of cheese, salt and pepper, and cayenne pepper if using. Heat through until cheese completely melts. Serve with crumbled bacon on top.

I usually run half the soup through my mini processor or blender because I like a smoother soup. You can also thin out with heavy cream/chicken broth mixture if you like a less chunky type soup.

Unfortunately, I don't know what the carb count for this would be.

Ok, I made this soup just a few minutes ago...I even fried some bacon just so I could have the full effect.

WHOA. Talk about delicious!!!! Smile I ate a HUGE bowl! LOL Probably for dinner, I will roast some chicken and put it in the leftover soup...

Thanks for the recipe, I know you posted awhile ago, but I just wanted to let you (and everyone) know that this soup is AWESOME!!!!
