Hello Everyone,
Wanted to share a recipe with you that turned out being creamed spinach, however, was just making some veggies...
I love garlic, onion and tomato as a base for many things and after putting these things in the pan with some canola oil, well this is what I did, but didn't measure ...

*Poured in little canola oil
sliced some onion in 1/2 slice pieces
1 large clove garlic, thinly sliced
1 roma tomato {any will do, I use whatever we have}

defrosted frozen spinach approx 1/2 bag
added little water then put on lid and let simmer

when water evaporated most of the way I added a nice size slice of
cream cheese and let that melt

I have to say my intention was just to steam up some veggies, however, adding the cream cheese made this a wonderful surprise. Next time will add more garlic and onion as well as tomato I forgot to add salt or pepper and was still delicious

If you enjoy creamed spinach, I think you will be happy with this one
If you happen to try this, let me know what you think Smile

Hope everyone is having a really nice week,
Elizabeth

Really sounds good- and cream cheese makes everything yummier!! I melt cream cheese and pour over steamed asparagus when I am in a hurry for a quick sauce, so I am sure I will love this. Thanks for the recipe!!
