Thanks Angie.
I used to make something similar,,,,,,, except that it was made with margarine, buttermilk (I believe -- to give it a "butter" taste), and corn oil.

I'll try this one, if I can get my lazy behind in gear. I've actually been meaning for months to try some whipped butter to see if it wouldn't be softer. Just been too lazy to do it. Now I know to add some extra light olive oil. I don't use extra virgin olive oil, I only use extra light. (Oh, I do have some EVOO, but that is to make my moisturizer. Laughing )

I'm thinking of using part grapeseed oil. Mostly olive oil, but part grapeseed oil. Hmmmm, may try that.

Hey Billie,

I used 1 cup butter and 1 cup extra light olive oil and whipped it in the blender. It's nice and soft and tastes just like butter. I wouldn't use EVOO, though, too strong of a taste. The extra light OO seems perfect. And who couldn't use more olive oil in their diet anyhow?

i am going to try this out. i did some thing like that before and i used the evoo and really did not like it. i will try it with the extra light olive oil. sue
