I made it in the micro yesterday and loved it with some swtnd cream cheese spread, but I could only finish half of it. I am making a big batch in the oven right now. I multiplied the recipe by 6, used 6pks of Truvia and 1T SF honey to sweeten. There was enough for 12 standard muffins. For 6 of them I am trying a cream cheese filling inside to see what happens.
I also took 2T of cream cheese and added a bit of SF honey to it. Then dolloped about 1/2t of the mixture in the middle of the 1/2 full muffin cup, then added a bit more batter over to cover to try for a filling. We will see soon how they turn out.
ETA- They turned out great and DH loves them! He does wish I had added a bit more sweetener, so I will try that next time. The cream cheese filled ones turned out too. Here's a pic (pls ignore the fact that we are remodeling
ETA again- The kids loved them too. Guess I will be making some more tomorrow morning . |

Those look great! Cream cheese makes everything better, doesn't it??

Made one for lunch today with blueberries. I used Purevia and I sprinkled a packet over the top after it baked and spread fat free cream cheese on it. I will do this again! Thanks! _________________

What is Purevia? I am guessing a stevia type sweetener? Is it a blend like Truvia?

The store I was shopping in only had Purevia, its the first Stevia product I have tried. It is a blend of erythritol and Stevia. Its made by the WholeEarth Sweetener Company. _________________

Hello
I am a newby and just made my first flaxseed OMM and it was vile. It looked and tasted like a used shower sponge. Where did I go wrong. I used 100% flax - was that it - or did I not cook it for long enough - it was quite pale? Just made the blueberry muffins and they were lovely.
I am desperate to find something to have for breakfast as getting fed up with what we English call a "fry up" every day.
Also you will have to excuse me as I am English = what is Club Soda? and also what does IMO mean?

IMO means "in my opinion". Also, club soda is just soda water or carbonated water. Sometimes it is flavored - sort of like ginger ale. Unfortunately, I do not know the answer to your flaxseed question and the muffins. I've never tried to make them yet.
Also, I am curious what is a "fry up" ?

Raeleo answered your questions about IMO (sorry a lot of acronyms used on here - I'll post a helpful link), and the club soda.
As for the flax muffin, you probably didn't do anything wrong. Could be a couple of things -- you may just not like them. Some people just don't like the taste of Flax, and for some it takes some getting used to, and then they do, but some just don't. But it could also be that you got some rancid flax meal. But then if the blueberry muffins were also made of the flax meal (sorry I can't remember right now if they were from flax or almond meal or soy flour), and they tasted OK, then it probably wasn't rancid. If they weren't made from the flax meal, that COULD be a possibility. The OMM can be made with almond meal (or any nut meal/flour) instead of flax. They will be higher in carbs tho than with just flax meal.
You may find this link very helpful when trying to figure out the abreviations or acronyms: http://www.acronymfinder.com/ . Of course some things such as the OMM (one minute muffin) might now come up.
And by the way, Anything that you like can be eaten for breakfast!

Krissie, I have a post in the FAQs thread that has several links to conversions. Some (or maybe all) of them may be very helpful to you (and others). Some give conversions from English to American or vise versa.

Thanks for your reply. To the person who asked what a "fry up" is, its what you would call the Great British Breakfast - fried bacon, eggs, sausages etc. |

Okay, between these, and the Ricotta NY Cheesecake, I KNOW this can't be a weight loss program.
I just whipped up a chocolate muffin to have for my snack later, but then decided to make two blueberry muffins for breakfast for me and my nextdoor neighbor. She's a diabetic, and has to watch her carbs. Well, you just know I already ate one of the blueberry muffins. Hey, I can't give one to Gloria without knowing it's tasty, right? I still have a few blueberries in the fridge that need using up anyhow, so I'll just make one fresh to have for breakfast tomorrow.
All I can say is if you haven't tried one of these, you owe it to yourself to do so. They are really good. I found mine to have a slightly eggy taste, but it also needed a little more splenda (I used about 1 1/2 teaspoons), and I think a little more splenda would kill that egg taste. But, even with the egg flavor, it was sooooooo good. I loved the texture, and it makes a good sized muffin.
Wanna have some fun? If you have a glass coffee cup or mug, use that to nuke it. It's a scream to watch it rise up and try to escape the cup, and then, the second the microwave turns off, it collapses like a bad souffle. It's actually still the same size, but it goes back inside the mug.

| I made one muffin with the recipe and added banana extract and a bit more splenda. When it was done I crumbled it in a bowl, added 1/2 and 1/2 and ate it like cereal....YUM! |
