One of the gals on another site experimented with a low carb milk, and it came out really well. Here is her recipe along with some tweaks by myself & another poster. I put my tweaks in bold. If you don't have Calcium Caseinate, you can make it leaving it out. But I really like the addition of it.
This turned out really good, and is cheaper & tastes better than Calorie Countdown Milk. (I reccomend Great Value powdered milk from WalMart.)
I was experimenting to make a cheaper version of CC milk and I do think it is pretty darn good. (CarolynF)
Homemade Low Carb Milk
One cup:
1-2 Tbs. of heavy cream (depending on how creamy you want it) — 2 Tbsp (Billie)
1 1/3 Tbs. of instant dry milk – 1 Tbsp (Billie)
1 cup of cold water
sprinkle of salt
tiny sprinkle of splenda (if you want) --1 drop Zero Carb (Billie)
½ Tbsp Calcium Caseinate Pwd (Billie)
Just put the ingredients in and shake it up. Refrigerate.
Calories 65 if 1 Tbs. of cream is used, 110 if 2 Tbs. of cream is used
5 grams of fat / 10 grams of fat
3 carbs / 3 carbs
2 grams of protein / 2 grams of protein (7 w/Calcium Caseinate)
Of course, you can double/triple, etc. the recipe. But it's pretty cheap to make.

Here's my formula for 1 liter of milk. (Barbo)
I thought I was making one quart but it turned into one liter as I forgot I was adding other things.
This is how it tastes best to us:
Home Made Low Carb Milk
One Liter
4 c. good water (I add enough water to make 1 qt)
5 tbs. plus 1 tsp. whole milk powder – 1/4 cup GV non-fat pwd(Billie)
1/3 tsp. salt
1-2 pkg. sugar sub. – 4 drops Zero Carb (Billie)
1/4/1/3/or 1/2 c. cream (this is entirely up to you)
5 Tbsp Calcium Caseinate Pwd (Billie)
Place everything except cream into a blender and whirl away.
Add cream and gently stir it in on low. (You could easily make butter)
Chill, drink, enjoy.
The only thing we don't have in this is the added vitamin D.
However we also don't have any chemicals in this.

Billie’s note: I add ½ Tbsp Calcium Caseinate Powder to the single serving, or 5 Tbsp to the Liter. This amount will not affect the carb count. I make 1 quart rather than 1 Liter, adding only enough water to make it 1 quart. (3 carbs per serving) The Zero Carb is a weaker version of Sweetzfree - 1 drop is equal to about 1/4 tsp of sugar or Splenda. _________________ Billie

where do you get Calcium Caseinate? and how many carbs are in the powdered milk? I always thought that was a no no. this sure seems cheaper than the CC brand! _________________ Dingie Dinah

I ordered the Calcium Caseinate. I'll have to do some checking to see where. I've forgotten right now. Maybe Netrition.
Yes, powdered milk is pretty carby, that is why there is so little in it. But if you look at the ingredients of CC milk, you'll see it contains low fat milk.
There are only 3 carbs per serving in the recipe. If you use Carolyn's original recipe and use 2 TBsp cream, you will have about 4 carbs.
Hmmmm, I checked and Netrition doesn't carry it. And my other thought was Honeyville Grain, but it doesn't seem to either. I'll have to try to figure out where I got it. Sorry. Maybe do a google for it meantime. _________________ Billie

I did a search on both Netrition & Honeyville last night, and did not find the Calcium Caseinate. But today I googled (actually I use Good Search) it, and found it both places!

Edited to note: Calcium Caseinate is no longer available at Honeyville, and Now no longer even makes it, so neither of those links are valid now.
Why a search on their sites didn't bring these up I have no idea! I have the Now brand that Netrition carries. I'm sure now that I did buy it from Netrition.
Adding the Calcium Caseinate ups the protein and of course the calcium in the LC Milk.
Oh, and I realized that I also left out that I add a small amount of Lechithin to try to help emulsify the milk. It does pretty well, but you still should shake or stir it a little before pouring it.
And, it tastes much better after it has sat in the ice box and gotten very cold. _________________ Billie

| I'm new here and I just made this recipe without the lecithin - came out pretty good - but wondering how much lecithin to add. This is a great site - been lurking around and eating low carb for about 3 weeks - no weight has come off yet - any suggestions? |

Sorry Vallarie, I didn't realize I didn't post how much Lecithin I used.
I use 1/8 tsp for the one cup milk, and 1/2 tsp for the quart.
Another note. Since posting this (and replying about the Calcium Caseinate), NOW brand has stopped making it. There are other brands out there, but I have not as yet bought any of the others.
As for no weight loss yet, some people just don't start losing right away. This has been discussed on a lot of posts thru the years. I and several others here never lost a pound for at least a month. Some did see a loss in inches tho before seeing any weight loss on the scales. Don't think I did, but I had forgotten to measure when I first started. Don't give up. Hang in there. You may not be eating enought fat. If you are restricting your fat intake, add some healthy fats. Be sure you are eating enough Good carbs.
Again everyone loses differently.
Oh, and to the site, and our Stella Style family Vallarie!!!

I got Golden Standard casein made by "ON" -from Netrition - which is saying 3 g carbs, 1 g fiber, 0 sugar per 1 heaping scoop (32g) whatever that means. It apparently also has sucralose in it - not sure what the other brands had - or what that will do to your calculations. It also has lecithin in it as well - what do you think? I spent 4 days reading the 40 something page thread about carbquick! Can you tell I'm into this - enjoying all your posts - thanks again. Valerie  |

Vallarie, I'm not sure that is quite the same. But it may work. It will add a small amount of carb to the recipe tho. Only about 1 carb tho, or maybe only about 1/2 carb. I'm sleepy and not thinkin too clearely.
Here is the Nutrition facts on the NOW Calcium Caseinate:
1 scoop (28.4g) (so if you used only part of a scoop, it might be closer in carb count. ??)
Total Carb <0.5 g
Protein 26 g
It is 100% Pure Calcium Caseinate Pwd -- no Sucralose (but the sucralose in the ON brand of Casein should be pure sucralose, so it won't add carbs.
I'll check it out later. Gotta get ta be here pretty quick, so it will have to be tomorrow if I remember. _________________ Billie

| I can't find carb counters anywhere in New Jersey. I contacted Whole Foods who said they would order it but it never happened. The calorie counters is a low count but still expensive! I'm just trying to figure out how to make this not too sweet - I will not add any sweeteners next time I make it. Thanks All! |

Clipper, I didn't come up with the idea, but was glad to post it here. You can make it chocolate. Add cocoa pwd & and a little extra sweetener to taste. If you like it thicker like the Hoods CC milk or other store bought chocolate milk, maybe add a little xanthin gum, guar gum, or ThickNThin not sugar or not starch.
Valarie, It is too sweet for me too, as the recipe make it. Just make it up unsweetened, then add a tiny bit of sweetener if you need it. The Hoods CC milk was sweetened, & I think maybe that is the main reason she sweetened hers. I think I do like just a tiny bit of sweetener in mine, but not a lot. _________________ Billie
