Hello everybody;
I posted this already at the 100lb and more group - but I hope that I get here even more answers.
I need help - we are planning a big camping trip next weekend with loooots of people (round 10 grown ups and 10 kids) and I would love to avoid the typical dutch oven with potaoes and campbells soup (what I never did like to much anyway)
do you have good ideas what to cook in a dutch oven and/or on a grill for that many people and what will be still low carb and yummmmmyyyyy --- and i have two young women coming, who just dont dare to go on the low carb life style yet - they think you can NOT have fun with food WITHOUT carbs.
I have to consider breakfast/linch/dinner and snacks --- it will be looots of cooking and tons of fun
I would love to show how good low carb food tastes and how easy it is to cook - I cant wait to hear from all of you and I plan posting in return pictures of this LOW CARB WEEKEND - hopefully even a picture of two young women who have to get the first step to the LOW CARB LIFESTYLE
and I would love to show that kids can live low carb and miss nothing (all what the kids might miss is a few pounds)
I am so excited and cant wait for your answers.

I never had the luxury of a dutch oven, but my family has three scouts with plenty of camping experience. My favorite is the foil packets. You could lay out an array of low carb choices--chicken breast and hamburger meat, onions, squash, peppers, mushrooms etc. Let everyone assemble thir own personal foil packet to suit their tastes. These are very yummy and very easy to clean up. Just nestle the foil packets in the coals and turn them a couple of times over 20 minutes.
You could also make kabobs. Marinate some meat beforehand and provide the veggies to assemble on the spot. These can be grilled on skewers or coathangers over the fire. Bamboo skewers are very inexpensive, just remember to soak them first so they don't catch fire.
If you have time to watch a slow fire with the dutch oven for several hours, it is wonderful to slow cook stew meat or beef tips with a jar of salsa and taco seasoning. This can then be spooned into low carb tortillas or eaten with salad. These would need to be put on embers for several hours in order to be tender, so you do have to babysit this one a bit.
One of the most fun times we had is when we made Stone Soup --remember the old children's story. Every family brought a contributing item for the soup. Of course, to make it low carb, you would have to request they leave the potatoes at home. We had beef , sausages and chicken with loads of veggies and it was wonderful stuff. Pretty good considering the 'main' ingredients were a stone and water.
Hope this gives you some ideas.

Here is what I would do:
Grilled chicken thighs/legs possibly make up some of George's BBQ sauce ahead of time
Grilled steaks w/grilled veggies
Waldorf cole slaw
deviled eggs
precook some bacon
lunch meat wraps (my favorite is ham/cream cheese/pickle in the middle)
pepperoni/salami/cheese slices
"candied" nuts
bake some muffins this week and wrap individually and freeze
cut up veggies w/dip
peanut butter cookies
That's all I can think of right now...

| spedini or Kabobs....and I LOVE sliced zucchini, summer squash and eggplant with salt pepper and EVOO on the grill....you could step up the eggplant by filling with a ricotta/parm mixture and rollup....cover with a tomato sauce or just a lil diced tomato and melt mozzarella over the top. If i had a dutch oven I would make the mock mac over a fire. You could grill some chicken or shrimp for a salad. for breakfast you could have dinah's flax "oatmeal" ..I would eat berries splenda and cream...or there is an Italian dish that is called ..in English..eggs in purgatory....my DH loves it...it's a few sunny side up eggs in a tomato/olive sauce. |

Lisa, we used to do those foil packs too. We called them Hobo Stew, I think. You could do that with fish too.
