I've been meaning to post that Angie. Just hadn't gotten around to it yet. I made it last week. DH & I really enjoyed it.
Well, I actually didn't make the pizza toppings the same. You can change those up to suit your pizza topping preferences & what you have on hand.

I was cooking it in my NEW toaster/pizza oven which has a 12" pan, so I had to adjust the crust recipe. I used 2 cups cheese and 2 eggs. I was gonna use half moz cheese & half cheddar/jack, but I only had a small amount of the cheddar/jack on hand. Was almost out. So I put that in my measuring cup, and used the rest Mozzarella. Next time I'll use more of the cheddar/jack.
I browned 1/2 pound hamburger and a few oz of Jimmy Dean's sausage, adding some onion toward the end. I made pizza sauce using a can of tomato sauce (no sugar added of course) and Italian seasoning. Spread a small amount of that on the crust. Then the burger/sausage, added mushrooms & pepperoni. I sprinkled a small amount of Moz cheese over that (meant to put it on before the meats and other toppings, but forgot it). It didn't need a lot of extra cheese because of the cheese crust.

We're not huge pizza fans, but like it once in a while. This was very good. Will do it again one of these days.

This was created by NancyElle from another low carb site. She also has a chewy crust version if you prefer a chewier crust. Not sure if LindaSue has it on her site or not.

This is a winner, isn't it? I'm a pizza purist...I like sauce, cheese and pepperoni. Don't bother me with anything else. Boy was this one good!

Ummmmm.....er....ehhhhh....hmmmm.....leftovers??

Seriously, though, I didn't have any. Pizza is a major portion control issue with me so I cut down all the ingredients to make a personal pizza size. So I can't help with the leftover question! Though I don't know if it would stay crispy, I think it would be fine either way because the crust is just plain tasty!

OK, after many attempts to get this right for one serving, I think I have it!!

Pictures at the end!

This was so good, and filling. I made a few tweaks....
This is what I did.......

Pizza for one person

I used a 2 c. Pyrex measuring cup, but only filled the cheese to the 1 cup line, that gave me room to mix everything else.

1/2 c. of mozzarella cheese
2 T. of grated Parmesan cheese
couple of grabs of sharp cheddar to take it to the one cup line
sprinkle of garlic powder, basil, and oregano
1 egg and beat this all together well with a spoon.

I spread this in a well greased corning-ware 9 inch pie plate.
Topped this with my 14 pepperoni. This is one serving per/pkg.

Baked at 450 degrees for 10 minutes.
Remove from oven and cool for 5 minutes.

While cooling, I spooned out 4 T. of Ragu and nuked 40 seconds or so till hot.

I used the sauce as a dip and my oh my...........it was delicious!!!

Enjoy!!!

My estimation for the carbs is...
Cheese - 1 c. = 4 carbs
1 egg = 1 carb
1/4 c. Ragu = 4.5 carbs
Total = 9.5 Carbs

Yes Angie, It's really very good. But I did NOT use Parmesan cheese. YUCK can't stand that stuff. So I did use a little different reicpe than you.

But I do think when I do make/have pizza it will be using this crust (not the parm one Laughing ).

Leftovers like Angie said there were no leftovers. As I said I made a 12" pizza. I think I had 3 pieces, and my DH ate the rest.

Here's a picture of my personal pizza! Of course you may want to get more creative with your toppings. I like plain 'ol pepperoni though. I tried to lift it up so you can see that you can pick it up if you want. See the trouble I go through for my fellow SS-ers?? Very Happy

I tried this for lunch today. I was easy and delicious. I will be using it again and it really satisfies that pizza need. It tastes like it has a really thin bread crust. Love it! Donna
