I put a 3-5 lb. pork roast (Boston Butt) in the crock pot....rub it first with a meat rub. Cook it until it's fall off the bone tender....usually 5-6 hours. Then while it's hot, shred it using 2 forks. I make a low carb bbq sauce & pour just enough on it to keep it moist & save the rest of the sauce for later in case anyone wants to add more when they eat. I always get rave reviews when I make this bbq. Combined with a really good recipe for low carb creamy coleslaw & we're all set.
Here's the bbq sauce:
Vinegar-based BBQ Sauce
1/8 c vinegar
1/2 tsp chili powder
1/4 tsp Tabasco
1 tsp black pepper
1/4 tsp onion powder
1/2 tbs sugar substitute- (I use splenda)
1 tsp salt*
1/2 tsp ground red pepper
1/4 tsp Worcestershire Sauce
1/2 tsp prepared mustard
1/4 tsp garlic powder
1/2 c catsup (I use Hunts tomato sauce)
1 c chicken broth
Combine all ingredients in a sauce pan & heat just a few minutes until the flavors blend. Store in refrigerator. *NOTE: I think the recipe calls for a little too much salt. So taste it before you add the whole teaspoon. I usually cut it in half or sometimes I leave it out.

i gotta say, i was skeptical as i started making this bbq sauce. didn't seem like there was "enough" of everything. but you know what? I really like this! AND my DH likes it too. not too sweet, and it has a "bite" to it that we like. I might add just a touch of liquid smoke to it, cause i like that smokey flavor. (maybe some cumin????) and it made up about 16 ounces. I'm using it on chicken thighs tonight.
Now I have George's bbq sauce for a sweet tomatoe sauce, and junie's for a spicy southern vinager sauce! ya'll gotta try this.

You're certainly welcome, Dinah. I'm glad you liked it. But I can't take all the credit. It originally came from someone on the Suzanne Somers' Boards, many years ago. I really don't remember who posted it. I was skeptical at first too......after all who ever heard of putting chicken broth in the bbq sauce? But it's really good. I always get great comments on my bbq when I add just a little of the sauce to make the meat moist. It does have a bite, so I try to go easy on the meat rub because that has a bite too. I especially like it because it isn't too sweet. I like that good old southern style......spoken like a true sutherner!!

Shortstuff, I'm glad everyone liked it. I like to use the blackened seasoning from George's book sometimes. Then again, I have another rub that I found from Rachel Ray. It's good on every kind of meat too. It just depends on what I'm in the mood for. I actually need to make some more of the sauce. I usually keep it in the fridge, but somehow I've let myself run out of it. We love it! With July 4th being a week away, we may just need some of it.

Hmmm, I'm gonna have to give Junie's butt a try. Or the sauce anyhow! What kind of vinegar is best? Apple cider?

Ok Angie, leave my butt alone!! Oh that's right you said it was the sauce!! hehe!!
I use regular cider vinegar in it. I also usually double this recipe to keep extra on hand.

Yum, this was really, really good. I can't remember the last time I made a roast. The sauce really is surprising. It's tangy and yummy. I got a roast just under 3# and only about 1/4 is left. DH made a pulled pork sammie and really enjoyed it. I'm going to enjoy the sauce on chicken too. Yum! This is for sure a keeper. Thanks June!

Another variation... try cooking the pork butt in diet root beer... I agree it sounds insane but I recently followed a pulled pork recipe that called for it and I promise it made the meat so tasty.
