I'm doing an SCD-style of low carb (It allows small amounts of natural sugar, doesn't allow sugar-substitutes, encourages using nut flowers, and doesn't allow any starches or grains.)
Yesterday's Menu

Breakfast:
* LC Crepes with mascarpone cheese and a little nutella
* Cup of coffee with some cream and teaspoon of raw honey
Snack:
*Small Apple
Lunch:
*Leftover LC Lasagna
*A few squares of Cantaloupe
Snack:
*Handful of raw pistachios
*Small Clementine
Dinner:
*Some baked chedder cheese squares (Goldfish cracker-like)
*Cod baked with mozzarella on top
*Broccoli and Cauliflower
Notes:
I was very thirsty for water all day. I used to be a big tea drinker but lately I'd much rather have plain water. I was also hungry so needed the snacks but they were satisfying and seemed to be what my body wanted. I felt very energetic and a positive mood. My stiff neck and constant neck pain is 75% better than a few weeks ago. Face and hands have lost a lot of bloating. I have so much energy that I almost feel compelled to add in exercise so I've begun taking the stairs at work instead of the elevator. I'm still finding it easy to wake up 1/2 hour to 1 hour earlier each day than I used to so that I can cook breakfast. Waking up a few times at night due to thirst but overall sleeping very, very well.
Breakfast cheese stick with sunflowernut butter and jam
Coffee with cream & honey
Apple
Coconut flour muffin with chocolate chips
Piece of organic turkey lunchmeat
Pizza with almond flour crust
1 Gluten-free beer
Small glass apple juice
Spoonful of sunflowernut butter
Not a "perfect" day but overall I'm very happy with it as it meets my primary goal of avoiding most starchy/grainy foods.
