crock pot chicken stroganoff ala KristinV
1.5 lbs frozen chicken breasts
2 tbls butter, melted
1 tbls evoo
1 .7 oz pack italian dressing seasoning ( you could sub your own seasonings)
1 8 oz pack of cream cheese
8 oz sliced mushrooms
1 cup heavy cream
put your chicken in the crock pot. mix seasonings with butter and olive oil. cook at low for about 4 hours. (my crock pot is crazy so your time may differ)
. About thirty minutes before serving cut chicken into chunks using kitchen shears and cut cream cheese into pot and recover. Sautee mushrooms in butter on stove and add cream. Pour all of this into crock pot. Add salt and pepper to taste.
4 to 6 servings depending on your eaters.
I usually serve this with green beans or broccoli or fauxtatoes.
I not sure what the what the carb count on this is. I know that it is low enough and has enough fat that i can eat it fairly often and continue to lose weight. I often make up my own seasoning mix instead of using the italian dressing mix. .
The original recipe called for cream of chicken soup and i just can't stand that stuff so I got rid of it and added the mushrooms and cream.
This is our favorite sunday afternoon dinner. I view it as serious comfort food. _________________ Dingie Dinah
