My daughter gave me a squash pie recipe that sounds really good, but it calls for a frozen pie crust. Does anyone have a suggestion of what I might substitute for the pie crust? It also calls for a little flour and sugar, but I can easily do without the flour and use Splenda/Whey Low. But the crust, I'm not sure what to do. It's a sweet pie, so it probably would be better with a crust of some kind. She said it's wonderful. Here's the recipe:
1 ½ cups grated yellow squash
1 cup granulated sugar (could substitute Splenda or Whey Low_
2 eggs
½ stick butter
1 tlb flour ( I think this could be omitted)
2 tsp coconut flavoring
2 tsb lemon flavoring
Mix all ingredients together and put into an uncooked frozen pie shell. Bake at 350 for 40 – 45 minutes. |

Looks good!
What if you try to use ground almonds or pecans and mix with melted butter. I have a key lime pie recipe that uses the pecan meal for a crust and it was good, but I think the almonds would taste less bitter. My pie pre-baked the crust because the remainder of the pie is refrigerated, but since your pie is baked, I don't know that I would pre-bake...
Just an idea!

Thanks Tammy, that crust is a possibility. Foxye has an upside down lemon pie that has a meringue crust, and it's wonderful. So I could even use that crust.
