So I decided to keep an on line diary.. I just got my cookbooks in the mail and I am GOOD to GO.... I have been 20-25 carbs for 10 days I will post my menus everyday ( at least thats the plan)

I spent most of the day on the couch watching old Twilight Zones and reading, I am feeling much better. I think i will go out tomorrow.
What I ate today--ribs, ribs and more ribs
Cauliflower( crock pot recipe)-5 carbs
Coffee with 1 tbsp cream(3)--3 carbs
I made a concoction of cream cheese, cocoa,peanut butter, coconut and cream YUM!!!--8 carbs
TOTAL=16 carbs--- Gonna go have another coffee this stuff is real sweet NEW TOTAL=17carbs
I will weigh daily, I put a monthly calendar on my computer to put my daily weight on so I can see what is happening.
You know guys I am a little afraid to use the recipes in the books because I have been keeping my carbs real low(20-25). Please convince me that it is ok

Hi Guys, I had a busy day with my mom and grandkids. Two are sleeping over tonight. they wear me to the bone.
THIS MORNING i make a praline pumpkin pie. GOOD!!!! bUY i ATE 2 PIECES .
My menu for the day was .... Hamburger on a oopsi roll
I small hamburger paddy
steak
coleslaw
2 pieces of PIE ...26 carbs

July 5---- GK had my computer everytime I went to use it!!My food was good I guess.... coffee with cream-5 carbs
steak-
cabbage and bacon-5carbs
cauliflower pizza-13 carbs
hamburger paddy-
TOTAL-23 carbs
Everyone had icecream but me. I didnt even care. I am happy with my woe.. I ordered pizza for my GK and I had homemade......Shelagh |

Shelagh,
Congrats on sticking with your plan. It's hard when everyone around you is eating the junky stuff. But you're doing great!! Keep up the good work.
I would like to know what is in your coffee and cream that gives you 5 grams of carbs. Heavy whipping cream should be about 0 carbs, and I don't think there are any in regular (not flavored) coffee. I was just curious what you might be using that's 5 carbs. The flavored creamers generally have lots of sugar in them. If that's what you're using, you might want to switch to heavy whipping cream & maybe a splash of Divinci's syrups to give it the flavor. Just a suggestion. I know for me if I'm using anything with "hidden sugars", I have a tendency to stall.

HI JUne, I am just using regular heavy cream. I thougt that I had to count 1 carb per tbsp. I measure.
I did well today ate mostly real low carb until bedtime THEN I remembered That I had pie in the fride( praline pumpkin) so I had 1 piece a(8 carbs) bringing my total to 18 carbs fore the day.
Hoe you all had a good day.
My weight is still down but sneaking uo 0.8 lb.in the lsy couple days'

today I feel a little out of control........I ate -chicken
mayonaise
steak= all 0 carbs BUT for my carbs I had 1 piece praline pumpkin pie=8 carbs
bread pudding=6.5 carbs
cream in coffee=5 carbs
Total Carbs=20.5
I did a 1 hour swim class. I havent lost any weight in a week. I guss thats ok, I like the way I feel most of the time.

I feel like crap!! My car wont start, The grandkids got on my last nerve and I have to work. I need my car, I go house to house and do hair, ugh!!
I havent eaten enough and I feel too lazy to cook, bad situation.. I had hamburger, ribs and coffee.. Toyal carbs=6

Thank you Angie, I feel better today.. I neededa new battery so that is done, I had 3 clients today then went to visit my mom. She is in a lot of pain and I try to visit 2-3 x a week.. Food was good' ........
Hamburger paddy
Steak and salad-2 carbs
Low acrb chocolate cake- 8 carbs
coffee with cream-4 carbs
Total--14 carbs |

from what I can tell you just need a little more info about the difference of carbs. Type in the search box: "all carbs are not equal" and see what happens as I have written about it many times on the forum.
What that means is it matters where the carbs are coming from not just the amount.
For instance, you do not need to count your coffee and cream as any carbs at all unless you are using a ton of cream and even then you need the good fats from that cream to burn fats on low carb!
And too many desserts making up your total carbs for a day is not good iether when first starting out, try eating simpler desserts such as jello with heavy fresh whipped cream sweetened with sugar subs.
The carbs you need to count are veggies for one and then surround that with zero carb meats or protiens.
And choose salad, spinach, cauliflower, zucchini, yello squash and more as listed in my books and everywhere else to guide you to these lowest carb choices.
You are being strict and that is good but you are not counting the foods correctly and not eating enough so it may seem.
And that's happening because your carbs are being eaten up by counting things like cream or even lettuce that have a negligable carb impact and I always referred to as "free" foods.
And lastly, I can be the one to tell you that of course you can use the recipes in the books and most likely if you do you will do better as that is why we wrote them using the exact recipes we used to lose the weight and continue to use everyday to keep it off.
And start with Livin Low Carb as it is the starter book that leads into Eating Stella Style as you get more experienced.
That's not to say you should not use Eating Stella Style but choose wisely.
Please read the first 30 pages carefully of each to get that little better understanding that all carbs are not created equal and how natural sugars effect you ebven in allowed low carb choices.
Not so confusing and once that light bulb goes off in your head you will find it very very easy and most of all satisfying.
You seem to be feeding yourm cravings with my dessert recipes when you need to eat more regular meals and enjoy the occassional treat. When you are full of protein and fats you will feel satisfied as desserts, even low carb, simply feed the cravings...I ramble so I will say...Good Luck!

I am still here. Thank you for your interest. I agree with you about the deserts but I just had to try your pie! YUM!!!
I have your 2 cookbooks and the dvds are on order. I will take your advice and lay off the great desserts you have so tempted me with,lol!
