Hey Stella Stylers,
Fall is here and it is a great time of year to have Chili. So I thought it might be fun to have our own little Chili Cook Off of sorts. So that simply means if you have a wonderful low carb chili recipe - don't keep it a secret - come on - let the cat out of the bag so we can give it a try. Please no chili using cat meat!
Just post your favorite chili recipes. _________________

Wondered if my cat out of the bag comment would stir up some fun.
Actually my dog tells me cat is quite low carb - not that my dog has ever eaten one. Just common knowledge among canines.
If I recall Chef Alf was always trying to cook some up back on his 80's sitcom called ALF - my kids loved renting the reruns from Blockbuster.
But really lets not have any dog, horse or lizard or snake meat recipes either. Chicken, Turkey, Beef Chili will be just fine - maybe for you hunters... Bambi Deer Chili might be acceptable.
I'm going to try and figgure out a chili recipe to post - I usually just wing it but I have used chopped up zuchini instead of beans and that was pretty nice. _________________

Margot's Chili version 1
Here is my chili that I made tonight. It turned out very yummy however after having run the numbers I will make some changes next time.
Its kinda Skyline Chili like (if you ever lived in Ohio its the standard by which all chili is measured)
1 can chopped tomatoes 87.5 cal and 28 carbs - 7 fiber =21 net carbs
1 can black soy beans 420 cal and 28 carbs- 24 fiber = 3.5 net carbs
1lb lean hamburger 1065 cal and 0 carbs
1/4 cup chopped onion 10.5 cal 2 carbs - don't know the fiber sorry
1 T unsweetened coco 12 cal 3 carbs- 1 fiber = 2 net carbs
1 t garlic powder - or to taste
1 T Balsmic Vinegar 10 cal and 2 carbs
Salt to taste
1t Chili powder to taste.
Full Recipe roughly totals 1605 cal 63 carb - 32 fiber = 31net carbs
Divided by 4 servings, each = 401 cal 15 carbs 7.75 net carbs
Had I used ground turkey and half a can of the black soy beans the
each serving would be only 253.5 cal and 12.25 carbs 7.25 net carbs
the carbs don't change much but the calories drop almost in half. If you wanted to lower the carbs I would use less of the tomatoes half a can perhaps. Its getting late I may have made a math error somewhere.
But you can see how a small change of beef to ground turkey can lighten the recipe calorie wise and the carbs could be cut by using less tomatoes.
All in all it tasted great. I thought about a second bowl and decided I did not really need any more. Now having seen the numbers I am glad I stopped and left some room for pumkin pie. The smart thing to do is run the numbers before you eat - better late than never.
Granted the numbers may be a bit different depending on brands you use.
If you don't care about numbers then just enjoy.
I will try those changes next time and try to let you know how it goes. _________________

i love skyline chili. i love gold star chili too. i will have to try your recipe.
i make my own chili but i cook 2 lb ground round and i add 2 cans diced tomatoes- i add a green pepper diced up , one fourth onion diced but usaully when i an doing this for low carbing i add only onion powder instead of fresh onions. i add 2 tablespoons garlic (wet) and then i get a package of chili mixing spices if the are lower carb spices and add alltogether in my cast iron dutch ovewn untill done. i do not like alot of hot in my chili but sometimes i add some hot sauce to it though. sue |

Thanks for posting, using onion powder rather than an onion would save some carbs.
I looked it up 1 TB of Onion Powder has 23 cal and 5 carbs
1 cup of chopped Onion has 92 cal and 21 carbs
Spices like garlic powder and onion powder do have carbs - it is easy to think that they are free foods but they do add up.
Thanks for a great example of a lower choice one could make to their chili recipe. _________________
