I recently ordered couple of low-carb cookbooks over the "net". One of them was George's of course, but the other was low carb slow cooker recipes. I did have to sub. sugarless instead of low sugar. I like to use the crockpot as I can come home from work in the morning, put something on and get up in the evening and eat with my family.
2 to 3 Lb. boneless pork loin
2 Tbl. olive oil
!/3 C. chopped onion
3/4 C. chicken broth
1/4 C. sugarless apricot preserves
1 Tbl. balsamic vinegar
1 Tbl. lemon juice
1 Tbl. sweetener of choice
guar or xanthan
Sear pork all over in oil and transfer to crockpot. Sprinkle onion around it. Mix together everything else but the guar, and poour over the pork. Set on low and cook for about 7 hours. When time is up, remove pork and thicken juices into a sauce to serve over it. I did have to put the sauce in a blender first and then empty into a saucepan before I added the guar. My son-in-law won't eat anything that has onion because of the texture. LOL
