KIELBASA and KRAUT

1 lb. cooked kielbasa, cut diagonnally into 2" pieces
1 small red onion, thnly sliced
1 15-oz. can sauerkraut, drained and rinsed at least twice
1 cup chicken stock
1 Tbsp. coarse-grain brown mustard
1/4 tsp. caraway seeds
1/4 tsp. salt
1/4 tsp. black pepper

In a large skillet, cook kielbasa and onion until just tender. Stir in remining ingredients and cook, covered over medium heat about 10 minutes or until heated through.
Serves 4
Per serving: 392 cal; 39 g fat (16 g sat. fat); 50 mg chol, 6 g carbs; 2 g fiber, and 14 g protein. Net 4 carbs per serving.
