Cheesecake Mousse


1 package Cream Cheese, softened
1/2 cup Whipping cream
1/4 cup Splenda
1 teaspoon Vanilla Extract

Using a mixer cream together cream cheese, Splenda, and vanilla.
In another bowl whip the cream to soft peaks.
Fold cream cheese into the whipped cream until well mixed.
Scoop into a pretty glass.
Refrigerate till you are ready to serve.
Top with fresh berries. Enjoy!

Billie's note: I got 4 (kinda small) servings from this. I replaced the Splenda with a combo of sweeteners. You can use you favorite sweetener(s). The concentrated liquid sweeteners will work fine.
Also, I only used 1 mixing bowl. Beat my whipped cream. (I did use another dish, and measured 1 cup whipped, then put the rest in a storage container, since I made up more than the basic recipe of whipped cream.) Beat the first ingredients, then added the 1 cup whipped cream to it. Definitely see NO reason to mix the cream cheese mixture & whipped cream in a separate bowl (as shown in the link)(EDITED to say that I guess i looked at it wrong and, she only used 2)!
I'm out of strawberries (which I served with mine), and am planning on serving tonight with a SF chocolate syrup/sauce (and maybe cherry Glucomannan glaze - see old site).
