Strawberry/Rhubarb Fluff

4 cups rhubarb, washed and cut into 1" pieces
1 cup strawberries, washed, hulled, and halved from top down
1/2 cup measurable Splenda or Truvia
1/4 tsp. orange zest or 2 drops orange extract, sugar free
1/4 cup water

Add all ingredients to medium saucepan. Cook, covered on simmer, until rhubarb is just tender. Berries will disintegrate but don't worry, their flavor in this dish is wonderful. Remove cover and let stand to cool to room temperature. Chill in fridge. To serve, spoon 1/4 cup sauce into dessert bowl, top with 1/4 cup whipped cream, another 1/4 cup sauce and top with a small dollup of more whipped cream and a fresh strawberry on top.
This recipe should make 4 servings at 6 carbs net each serving.

This sounds really good.
Personally (and that's just a personal flavor taste), I'll sans the orange. Don't care at all for zest, and think I'd prefer it without the orange at all. But again, that's ME!
