Food Network Chef George Stella was tipping the scales at a weight of 470 pounds. His family, particularly sons Anthony and Christian, were all well on their way to being “just like dad”. Photo by Ariel Poland Popular Food Network chef George Stella showed Jockey Hollow Middle School students how to eat foods that were not only better for their growing bodies, but also tasted good. Stella, a Monroe native, led cooking competitions on the school's stage, where he taught student volunteers how to make pancakes and 'smoothie' drinks by using only nutritious ingredients. "All we have to do to stay healthy is to make the right choices and eat healthy," Stella told Jockey Hollow students Wednesday. School Principal John Ceccolini said, "Stella is sending a great message to the kids, which is that good food can still taste good." After watching a brief video that included clips from celebrity news shows "Entertainment Tonight" and "Inside Edition," the students learned how Stella and his family lost a total of 560 pounds by changing their eating habits. Describing himself as "morbidly obese," Stella said he lost 250 pounds by eating fresh foods and making healthier food choices. His wife, Rachel, lost 75 pounds. His two sons - Christian and Anthony -lost 160 and 75, respectively. Along with changing the types of food they regularly eat, the family also eliminated sugar from their diet and drank a lot of water. Stella chose volunteers to participate in the cooking competition by asking his audience to identify lesser-known fruits and vegetables such as papaya, star fruit and coconut. After donning aprons, Stella coached the selected students into creating smoothies by using a sugar substitute, and pancakes using ground almonds instead of flour. Samples then were given to a panel of student judges. Student Erik Kenney, 13, said he enjoyed watching his classmates work together to create the healthy food items. Ariel Willett, 13, also liked watching the cooking demonstration. In fact, after hearing about Stella's personal battle with fighting obesity, she said she's inspired to make healthier food choices in her own daily diet. "Also, he showed us that it's really not all that difficult to make healthier meals," Ariel said, and added that young people today should eat foods with less fats and sugars. Mirabella Pisani, 13, agreed. When asked about her eating habits, Mirabella admitted to "kind of eating healthy. "But, I could do better," she said. "It looks like a fun way to eat and prepare food." Stella offered parents and other members of the Monroe community the opportunity to learn more about healthy eating on Thursday night. According to Assistant Principal Becky Kosisko, more than 100 people showed up for his evening cooking demonstration, and learned how to prepare some of Stella's favorite recipes. "It was wonderful because it was truly a mixed group of seniors, parents with kids and people from the community," Kosisko said. "George's energy was just as strong as it was the day before, when he spoke with just the kids." Kosisko said Stella answered a variety of questions from the audience about healthy eating. Some asked about the benefits of butter versus margarine. Anotherperson was concerned about using sugar substitutes. Students from Masuk High School's Culinary Arts program assisted Stella in a live cooking demonstration. He also gave the audience pre-cooked samples of Anaheim shrimp scampi with spaghetti squash, cinnamon toast pancakes, nutty muddy trail mix, better cheddar cheese crisps, Anthony's berry good smoothies, and pumpkin pound cake and Stella-style New York ricotta cheesecake, both prepared without sugar or flour. All recipes are in his books: "George Stella's Livin' Low Carb" and "Eating Stella Style." Stella's presentations were a huge success, Kosisko said. "George is committed to Monroe, and especially the children of Monroe," she said. He was talking about his recent diagnosis as a diabetic and his need to eat better and exercise. I was immediately struck by his honesty and his dilemma. Here’s a man who is on the job 24/7, probably skips meals, and certainly thought he was too busy to work out. That was me just a few years ago and today, I’ve lost 260 pounds. How? By changing my relationship with food. Not an easy thing for a chef. I decided to reach out to the mayor to see how my experience could help him personally and if there was something I could do to help him with Bridgeport’s Mayor’s Diabetes Awareness Initiative. The mayor and his staff warmly received my offer and I am happy to have been invited to share my story and my secrets of success with him and with you, the residents of Bridgeport. Diabetes is a national epidemic Obesity and diabetes are at near epidemic proportions in the United States, putting our most treasured resource in jeopardy: our children. More than half our population is overweight but more importantly and alarming is that 1 in 3 children is now considered obese. Even worse, the instances of diabetes developing at earlier ages are skyrocketing. And we are not alone. The international community faces the same fate and, like us, is feverishly initiating campaigns to raise awareness and educate the public about the importance of proper nutrition for a healthier lifestyle. Diabetes and obesity are preventable Twenty-six years ago I was a promising young chef at the top of my field and starting a family; my two biggest dreams in life were becoming a reality. So I threw myself into my craft to be the best chef I could be and support my family to the best of my ability. I worked crazy hours, had no time to eat, and couldn’t even think about getting to a gym. Lose weight or die Six years ago I had a reality check when I was taken out of the kitchen in a wheelchair with heart failure at 467 pounds. I was told to lose weight or die. I had no idea of what to do nor could I imagine the unbelievable journey I was about to undertake. This was a mission that I could not turn down, nor would I want to; a mission to spread the word that the very same food that I had been serving my customers for 25 years as a chef was my redemption. A mission that would lead my family and me to lose a combined 560 pounds. It appears that I definitely could not see the trees for the forest all those years in the kitchens. After all, I knew food and was surrounded by it, but I wasn't eating it! I had been skipping meals and then eating the wrong foods at all the wrong times for over 20 years and my family had been following my lead. Six years ago my youngest son Christian was 305 pounds at age 15, Anthony was 225 pounds at 18, and my wife Rachel, who never had a weight problem before, had followed suit and was over 200 pounds herself. It seems before I could blink we had become an obese family and I felt the weight of the world upon us. I blamed myself. Then Low Carb became the rage and we thought it was a joke. I mean how could you eat all the steak, bacon, eggs, and cheese you want and still lose weight? Besides, I knew better than anyone, that diets don't work! This had to be another fad. It all starts with learning new food habits But we tried low carb anyway and we started simply by cutting out all the white stuffs from our diet and very quickly we learned what really does work; changing your eating habits!
