Notes On Geo Stella's Bourbon BBQ Sauce

Have you tried the No-Cook Bourbon BBQ Sauce on page 89 of George Stella's first cook book, LIVIN' LOW CARB ???

It is soooo very delicious. You have to try it! I love it, It is the only BBQ sauce I use.

Since my husband is not suppose to eat too many tomatoes because of the potassium content, I tried to lighten up George's recipe to see what it would taste like if I eliminated the tomato paste and tomato sauce from his recipe, and used the less dense (and lower carb!) 28 oz. can of diced tomatoes in it's own juice.

So for the whole recipe, I used just one 28 can of diced tomatoes in it's own juice. (3 net carbs per 1/2 cup, according to the label.)

I realized that I may have to cut down on the amount of spices etc. because there is a lot less tomatoes in the recipe, doing it this way.

What I didn't know, was if I should cut down on the amount of Bourbon too, because I want the full flavor in the finished BBQ sauce. So I tried it with the FULL amount asked for of Bourbon, but with only 1/2 of the asked for spices etc. What would it turn out tasting like???

The blend of everything tasted powerful, with a big bite to it! Just the way you want a BBQ sauce to taste over meat. You get the full flavor and also, a thinner chunky sauce that pours well, but a lot of it sticks to the top of the meat also; it went perfectly with the Baked Pot Roast.
